What is Induction Cooking?
Induction cooking is a pleasure. In many ways it is faster. Water and preheat times are much shorter. For heating chocolate and making candies and confections the double broiler may be eliminated. Precise heating control is better than with the old coil hot plates.You do not have to worry about the hot kitchen or wasted energy with induction.

- We had an induction stovetop, it recently broke, and our landlord replaced it with a regular cooktop. I miss the induction a lot. I didn't even realize how valuable it was to boil water or cook food in seconds, instead of waiting for everything to heat up ... and I didn't realize how great it was to have a cmpletely cool cooktop almost immediately after removing the pan. sigh. :)

- I'm wondering more about induction -- what it really is; where did it "start" and is it less expensive to cook that way? Since we live in Florida, any time we can do our cooking and not heat up the whole house OR heat up an old-timer that is post-menopausal and pretty hot to begin with ... well any time we can cook and keep cooler, that works for me!
