Recipe for Potato Bacon Casserole
Ingredients
- 1 Pkg McCain's Hashbrowns
- 500mL Sour Cream
- 2 Cans Cream of Mushroom Soup
- 1 Large Onion
- 1-2 lbs BACON :)
- 1/3 Cups Bacon Grease
- 2 Cups Grated Cheddar Cheese
Instructions
Dice and cook your bacon nice and crispy then put all of your ingredients, except your 1/3 cup bacon grease, into a big mixing bowl and mix together. Pour the bacon grease on and stir it in once you have the rest of the ingredients mixed most of the way so the potatoes don't thaw too much and get mushy or lose their shape.
Put your mixture into a 9x13 baking dish and top with your grated cheese.
Bake it in the oven at 350 for 1 hr - 1 1/2 hrs (depending on your oven)

- I would like to try it using real potatoes instead of frozen hash browns. It sounds delicious. You know what they say, "Pork Fat Rules". I save bacon grease in a container in the fridge to add to dishes when I need a bacon or smoky flavor and am out of bacon. Some Mexican dishes are just not authentic in taste without the lard or bacon flavor.
