This is My Recipe for Homemade Potato Salad

Some years ago, when I worked in an office environment, we often had pitch-in lunches. A co-worker of mine, a woman who was originally from Germany sometimes brought in her homemade potato salad which I always enjoyed. Of course, like many of us, she had no set recipe.

With a bit of prodding however, she was able to give me a vague idea of her process when creating this dish. Now I can't testify that this is truly a German Potato Salad, but I can certainly say it's based on an authentic homemade potato salad that a German woman created.

This recipe for potato salad has simplicity and speed as its main attraction, so making it for a family should be a snap even when time is tight.

The Ingredients

Here's a list of what you'll need, but I've also indicated some substitutes that I've used in a pinch:

  • 2 1/2 to 3 lbs of red potatoes, peeled, and cut in 1/2" cubes
    (russets substitute in a pinch)
  • 1/4 cup water
  • 1 Chicken Boullion cube
  • 1/2 cup mayonnaise
  • 1 Tablespoon half and half
  • 1 tsp fresh chopped dill
(1/4 tsp dried dill weed can substitute)
  • 1 tsp Dijon mustard
  • 1 small onion, chopped finely
  • 2 boiled eggs, chopped
  • 2 celery stalks, cleaned, halved and sliced 1/8-1/4"
  • Putting It Together

This easy recipe for potato salad really involves only a few steps:

  • Boil eggs and cook potatoes. The potatoes should boil for only about 12-15 minutes as you don't want them to get too soft.

  • Make the dressing. Dissolve the chicken boullion cube in 1/4 cup of water. Combine 1 Tablespoon of this boullion mix, 1 Tablespoon half and half, with 1/2 cup of mayonnaise and 1 teaspoon of Dijon mustard. Add in chopped onion and celery.

  • Mix dressing and cooked potatoes together, gently fold in egg, and sprinkle dill on top. You can season a bit more with salt/pepper if desired.

Cover and refrigerate for an hour, then serve.

  • So What Do You Say?

    I love It!!!!!!!!!

Although Chef said different and the way he prepares the potato salad is almost like my mom did it, I more prefer your variation. Anyway, I think there are as many different types of potato salad as there are different regions in Germany.

I absolutely think there is always more than one recipe for anything ... potato salad is something that I love whipping up because I look around and see what other ingredients I have available! Love the German kind!

No, it needs more mustard, something sweet, maybe some bacon!

    CountrySunshine says:

Haven't heard of this type of German potato salad... and I used to live in Germany! It definitely needs some bacon... It's worth a try, tho!

Most German potato salads I've tasted aren't creamy. i like all of the chef's suggestions except the pickles. I don't like pickles. I do like the idea of bell peppers instead of celery, since although I like celery, I hate peeling it.

    access2 says:

Generally German potato salad is served hot, and should have some bacon or bacon grease. I like the chicken bullion part though. See my SEO lens http://www.squidoo.com/squidooworkshop101 for some keyword ideas

I have no idea, but I like what Chef suggested :)

    chefkeem says:

Fry some chopped bacon and brown the onions along with it; add a bit of brown sugar and freshly chopped parsley in the end. Mix this with the cooked potatoes before you add the creamy dressing. Forget the celery (I don't like it! LOL) - add diced bell peppers and chopped pickles instead. Perfect! Ooh, maybe a little diced apple...
