This is My Recipe for Homemade Potato Salad

Some years ago, when I worked in an office environment, we often had pitch-in lunches. A co-worker of mine, a woman who was originally from Germany sometimes brought in her homemade potato salad which I always enjoyed. Of course, like many of us, she had no set recipe.

With a bit of prodding however, she was able to give me a vague idea of her process when creating this dish. Now I can't testify that this is truly a German Potato Salad, but I can certainly say it's based on an authentic homemade potato salad that a German woman created.

This recipe for potato salad has simplicity and speed as it's main attraction, so making it for a family should be a snap even when time is tight.

The Ingredients 

Here's a list of what you'll need, but I've also indicated some substitutes that I've used in a pinch:

  • 2 1/2 to 3 lbs of red potatoes, peeled, and cut in 1/2" cubes
    (russets substitute in a pinch)
  • 1/4 cup water
  • 1 Chicken Boullion cube
  • 1/2 cup mayonnaise
  • 1 Tablespoon half and half
  • 1 tsp fresh chopped dill
    (1/4 tsp dried dill weed can substitute)
  • 1 tsp Dijon mustard
  • 1 small onion, chopped finely
  • 2 boiled eggs, chopped
  • 2 celery stalks, cleaned, halved and sliced 1/8-1/4"
  • Putting It Together 

    This easy recipe for potato salad really involves only a few steps:

  • Boil eggs and cook potatoes. The potatoes should boil for only about 12-15 minutes as you don't want them to get too soft.

  • Make the dressing. Dissolve the chicken boullion cube in 1/4 cup of water. Combine 1 Tablespoon of this boullion mix, 1 Tablespoon half and half, with 1/2 cup of mayonnaise and 1 teaspoon of Dijon mustard. Add in chopped onion and celery.

  • Mix dressing and cooked potatoes together, gently fold in egg, and sprinkle dill on top. You can season a bit more with salt/pepper if desired.

    Cover and refrigerate for an hour, then serve.

I used to work at a deli that served premade potato salad-- yuck. All I have to say is make your own. Great work on this lens!

    I have had similar potato salad, but I don't recall the chicken cube for the dressing, that sounds really good. I love all the eggs, green onions and celery in a potato salad, it truly adds to the flavor.
