Ingredients you will need for Potato Salad* 4 average potatoes
* 4 eggs
* 2 Tbsp. minced onion
* 1/2 stalk celery, chopped
* 1 Tbsp. cider vinegar
* 2 tsp. sugar
* 2 Tbsp. sweet relish
* 1 clove garlic, minced
* 1 Tbsp prepared mustard
* 1/2 cup mayonnaise
* salt and pepper to taste

How to make this Potato Salad Recipe
Follow these simple directions to make this Potato Salad recipe
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
3. In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, sugar, vinegar, minced onion, mayonnaise and salt and pepper. Gently mix together and serve warm.

- This is perfect!! I'm a on diet for 6 weeks. Not because I think I need one but because our church is donating food to a hungry child for every pound we lose. I like that it only has a 1/2 cup of mayo for the whole batch. That's perfect. I think I'll try mixing it up with some rose potatoes...? or whatever those little red ones are called.
