3 tablespoons butter
3 tablespoons all purpose flour
3/4 teaspoon salt
dash of white pepper
3 cups milk
3 cups mashed potatoes
1/2 pound Velveeta Cheese
1 cup Frozen Peas

How to prepare Creamy Mashed Potato Soup
Creamy Mashed Potato Soup is not only declicious but thrifty as well.
Directions for preparing Creamy Mashed Potato Soup
Make a white sauce by first melting the butter in a sauce pan over low heat.
Blend in the flour with a whisk.
Stir in salt and a dash of white pepper.
Add milk all at once.
Cook quickly, stirring constantly, till mixture thickens and bubbles.
Remove from heat when it bubbles.
Add cheese, stirring until it melts.
Add potatoes and stir until smooth.
Add 1 cup frozen peas or to taste.
salt and pepper to taste.
Note: You can add more or less potatoes to adjust the thickness to your liking.

- This sounds absolutely yummy! I sometimes add mashed potato to my soups to thicken them up a bit but I haven't tried mashed potato soup... YET :-)

- When my parents were very poor they lived on potato soup and peanut butter and pickle sandwiches. They dropped the sandwiches, but still loved the soup. At nearly 92 Dad will still make some. *****
