Did you know February is Potato Lovers Month?

 

Not only is this the month for lovers and Valentine's Day, it is the month for lovin' potatoes.

What is Your Favorite Food? 

Go ahead, ask me. "What is your favorite food?"
I would have to reply, "Potatoes."
I will take them in almost any form- baked, mashed, hashed, scalloped, souped, and fried. You name it. I love it.

Mashed potaoes are one of my favorite comfort foods on a wintery, blustery or even just a depressing day.

New creamed potato and pea soup means the peas just came on during the late summer harvesting.

French Fries (or whatever you call them) are always in season - perfect for summer barbeques, or winter holiday parties.

Baked potato bars are the perfect (and even healthy) way to feed loads of people at parties or family gatherings.

And fried potatoes or hash browns are truly a breakfast staple.

There are so many ways to eat a potato, the possibilities are endless. (I'm getting hungry just thinking about it.)

I plan to share a few of my favorite recipes for potatoes and also tell you how to pick an excellent potato for each potato dish you prepare.

The Best Creamed Potatoes and Peas Recipe 

I realize this recipe isn't very exact. But it should turn out. It is very forgiving.

You should choose fresh red potatoes and newly picked peas for this recipe. Although, frozen pease will work.

Boil potatoes barely covered with water until firm, but done.
Add evaporated milk (until the liquid looks milky)
Add peas - uncooked
Add 1 Tablespoon Butter
Add Salt and Pepper to taste

Thicken with flour and water mixture - Not too thick - it doesn't take much flour to thicken this recipe.

Serve warm and Enjoy!

Potato Bar Ideas 

What Delicacies to Serve with Your Potato Bar

Here are my favorite topping or delicacies to serve at a potato bar party.

1. Broccoli in Cheese Sauce
2. Chili
3. Cheese
4. Sour Cream
5. Bacon Bits
6. Country Gravy with Sausage or Hamburger
7. Green Beans in a thinned Cream of Mushroom soup
8. Cottage Cheese
9. Salt and Pepper (of course)
10. Lemon Pepper
11. Lawry's Seasoning Salt
12. Sauteed Onions
13. Sautee Mushrooms
14. Green Peppers
15. Diced Tomatoes

Just so you know - your imagination and creativity decide the limits. Experiment and enjoy!

Which Potato do I Use? 

Do you know how many varieties of potatoes exist? Each variety is not created equally. Here is the easy way to know which potato to use for the dish you want to create.

**Russet Burbank: A great universal potato - great for baking, salads, mashing, soups, just about anything.

**Russet Ranger: Great for making french fries or using in other methods of frying.

**Russet Norkotah: Mash them

**Red Potatos: Good for salads, baking, roasting, and making soups (creamed potatoes and peas)

**Yukon Gold: Excellent Mashing potato. Not bad for frying

**Blue or Purple potatoes: Cool for exotic dishes. Good for roasting or mashing.

Disclaimer: This is not an all extensive list, just a quick reference to give ideas for the most popular potatoes varieties. Make sure you check your bag to know what kind of potato you are purchasing.

Healthy Baked French Fries 

Choose large, long Idaho potatoes (see the list above to choose your variety). Slice in long square slices, or use a slicer for this.

Spray a cookie sheet with non-stick cooking spray. Sprinkle cut potatoes on the cookie sheet. Spray the top side of the potatoes with non-stick cooking spray. Dust with salt or your favorite seasoning salt. Bake at 425 degrees for about 20-25 minutes.

After the fries are cooked and done (soft), I like to put them under the broiler for 3-4 minutes to brown them up and make them a little bit crispier.

Let cool for a minute or two and serve with your favorite dipping sauce.

Mom's Potato Refrigerator Rolls 

My relative RAVE over this recipe and always beg for more rolls, please!

1 Tablespoon Yeast
2/3 cup sugar
2/3 cup shortening
1 cup lukewarm mashed potatoes
1 1/2 cups warm water
1 1/2 teaspoons salt
2 eggs
7-7 1/2 cups flour

Dissolve east in warm water. Stir in sugar, salt, shortening, eggs, potatoes, and 4 cups of the flour. Beat until smooth. Mix enough of the remaining flour to make the dough easy to handle. Knead until smooth on a lightly floured surface for 5 minutes. Pleace nin a greased bowl and turn greased side up. Cover bowl tightly with saran wrap and regrigerate until ready to use. This will keep up to 5 days in the fridge. If your dough rises, punch it down occasionally.
When you are ready to use it, take out the amount needed, roll it, spread butter on it, cut it and shape it. Cover with a lightweight towel and let it rise in a warm place until double in size, about 1 1/2 hours. Bake at 400 degrees for 15-20 minutes.

Serve and enjoy!

p.s. I prefer to use these rolls for leftover turkey sandwiches at Thanksgiving type meals. Hopefully there are some left over after the meal.
