Yummy!  Yummy!  Yummy!  Sunmi sure makes a tasty potato salad.  For flavour, she addes some chopped ham.  Why don't you try your hand at making it?  This lens provides a lot of leads on potato salads.

 

Potato Salad on Wikipedia 

Potato salad is a dish made from potatoes, and varies throughout different regions and countries of the world.

With respect to its place among the various individual menu courses served together as one meal, it is better classified as a side dish rather than a salad per se, as it generally accompanies the main course.

General versions of potato salad include:

*salad made with baby potatoes, cooked in their jackets and left whole (skin on)

*larger potatoes, cooked in their jackets and then peeled and cut

*salad with mayonnaise/Miracle Whip/sour cream/milk dressing

*salad with vinegar dressing

*salad with bacon, anchovies, or mustard.

*salad with a fresh herb or dill dressing and/or gherkins, capers and other spices.

*salad with raw onions, cooked onions or pickled onions.

*salad with tomatoes or green beans.

*salad with hard-boiled eggs (a combination of potato salad and egg salad)

*salad with ham, pickles, corn, hard-boiled egg and tomato (known in France as salade piémontaise)

Different versions of potato salads are served at different temperatures. Southern-German potato salads are often served warm or even hot, while some are served at room temperature. In the U.S. and northern Germany potato salads are commonly served chilled.

Potato salad recipes can be found in many cookbooks, but potato salad connoisseurs and enthusiasts encourage experimentation.

Potato salad is often served with barbecue, roasts, hot dogs, fried chicken, hamburgers and cold sandwiches. It is generally considered casual fare, and as such is typically served at picnics, outdoor barbecues, and other casual meals and events. It is a popular menu choice of cooks preparing food for a large number of people, because it is easily made in large quantities, it can be prepared in advance and refrigerated until needed, and requires only inexpensive ingredients.

It is typically more sour in taste and contains pork or bacon. Potato salad from northern Germany, however, is generally based on mayonnaise and quite similar to its US-counterpart.

A Basic Potato Salad Recipe 

Since I've done it several times, I can provide the basic steps. You need:
*4 medium-sized potatoes
*2 or 3 eggs
*an onion
*a teaspoon of vinegar
*a spoonful of mayonnaise of whipped salad-dressing
*salt and/or pepper
*a little milk

1. Peel the potatoes and boil or steam them until soft. To help lighten the flavour and taste, add about a teaspoon of vinegar into the water while boiling or steaming. Personally, I find steaming makes the potatoes taste very light.
2. While the potatoes are boiling, finely dice your onion.
3. You also need boil or steam the eggs. To save water, I put them in with the potatoes.
4. Once the potatoes are soft, remove them from the hot water and cool them off by running cold water over them. It is imperative that they are neither luke warm or hot.
5. Add enough milk to the potatoes so them mush together easil. Stir. You now have a nice batch of mashed potatoes.
6. Peel and slice the boiled eggs. Add them to the potatoes followed by the onions and the mayonnaise or whipped salad dressing. My favourite dressing is yoghurt flavoured. Depending on your personal taste, you may choose to add more of less dressing but don't add too much or it will make the potatoes very watery.
7. Mix together and season with salt and/or pepper until you find the desired taste.
8. Enjoy

Seasoning Tip 1 

Parsley makes a nice seasoning to potato salad. If you have the spice, try it instead of salt. If you have actually parsley, chop it finely and let it sit in the boiled water for only a minute or two. Once it has softened, you can mix it into the salad.

Seasoning Tip 2 

Certain smoked meats also make good seasonings. I have added a cupful of smoked ham, sandwich chicken and others from time to time. Why not experiment and try.
