Delicious Pot Roasts

Pot roast is one of my favorite entrees to cook at home and eat out. This photo is a delicious pot roast dinner served over mashed potatoes at Bob Evans Restaurant to us today.  I asked for the recipe, but, was told it is never given to the public.

My Pot Roast

This is the pot roast that is simmering away at 325degrees in my oven right now. And does it smell good! Onions and carrots really produce a delicious aroma as they cook and release their juices.

In the picture you can see the only spices I use for pot roast, salt and pepper. You could use a whole bay leaf or 2 during the cooking and remove them before making the gravy. But, I like the taste of vegetables and beef just the way they grow. That's better to me than covering up the flavor with heavy sauces or a lot of spices. Sometimes I do add a small garlic clove, if I have the fresh garlic available.

I always start pot roasts cooking in the morning, this time at 10am. Then it cooks for 5-7 hours or until tender. The roast will be removed from the oven around 5pm and refrigerated until the day it is served. When the pot roast is taken out of the frig, any fat that has congealed is removed before the food is reheated and served.

This is the best small appliance I have ever had. I have had it 20 years or so. I cook everything in it: pot roasts, pork roasts, stew, pulled pork, beans, etc. I have purchased about 8 of them over the years for wedding gifts, college graduation gifts, Xmas, etc.

There are two main reasons I love this so much. One is the versitility of the heat control. I hate crockpots because all you get is low and high! Give me a break, who cooks like that?? These have settings from 1-5, almost as many as a stove burner. I can brown my stew or roast on 5 then turn it down to 3 or halfway between 3 & 4 or 4 depending on how long I want to be away from the house or want it to cook. The base doubles as a griddle by itself. Takes up very little counter and storage space. The pot goes into the oven or on the stove if you need or want it to. The pot and lid go into the dishwasher, although I ususally just give a quick wash with hot soapy water and wipe off the base. The other reason I love it is it is small and lightweight. No heavy monster crockpots to handle, try to lift full of food and then try and wash! "

    Love pot roast, though I cook mine in the oven or even the pressure cooker for an even more tender outcome...
