Prime Rib is the name for a cut of beef off of the rib section of the cow, incidentally. The name "Prime Rib" refers solely to the cut of meat, not the grade, that is Prime Rib isn't necessarily Prime Beef, it could be Choice, Select, Standard, etc.
It makes a wonderful roast and is also good cut into steaks for grilling.If frozen then shaved thin and cooked and topped with Cheez Whiz, it makes the traditional Philadelphia Cheese Steak.
