Super Easy Cupcakes

Use a box of cake mix

If you are in a hurry or are worried that cupcakes for an important party might not turn out as well as you had hoped, then you can buy a box of plain white cake mix. The box will tell you how to bake them. You will probably also need:

  • egg whites
  • vegetable oil (eg virgin olive oil)

Pink Princess Cupcakes 

Vanilla Cupcake Recipe

There is a wide variety of cupcake recipes. You'll find some more on the Cupcakes Recipes and Tips page. One of my favourites though is vanilla. Here is the recipe.

Ingredients for
24 - 30 cupcakes
 3/4 cups plain cake flour (not self-rising)
 ¼ cups unbleached all-purpose flour
 4 large eggs
 2 cups sugar
 2 cup whole milk
 1 cup unsalted butter
 1 tablespoon baking powder
 ¾ teaspoon salt
 1 teaspoon vanilla extract

MethodPrepare by pre-heating the oven to 325 degrees and line a cupcake tray with cake papers
Mix the dry ingredients, keeping your mixer on slow so it doesn't fly everywhere
Slowly add the butter, mixing so that it is covered by the flour mix.
Mix the rest of the ingredients in a separate bowl.
Combine the two mixtures by slowly pouring the wet mix into the dry mix. Whisk lightly to keep it fluffy.
Ladle into the lined cupcake tray. Only fill about ¾ full so that they can rise without overflowing
Bake for 9 minutes and rotate. Bake for another 8 minutes or until golden brown.
Tip out the cupcakes and allow them to cool on a wire rack.

Decorating Pink Princess Cupcakes

One you have baked vanilla cupcakes and they have cooled, they will be ready for decoration. This video explains how to create pink princess cupcakes. You will also need pink buttter cream frosting (icing). If you don't know how to make this, then please read my lens all about butter cream frosting. Just mix in some pink food coloring.

The video is particularly aimed at helping mums to involve their kids in the decoration process.

Crown Your Princess Cupcakes

Add beautiful fondant crowns

Crowned Cupcake by ClevercupcakesOne simple decoartion for your princess cupcakes is to make top them with a swirl of cream and then crown that with fondant crowns. Rather than buy fondant, you can make your own with this fondant recipe, or maybe try gold fondant. Just roll it out about 1/8" thick and as wide as you wish your crowns to stand. Trim off any excess. Serate one edge by cutting triangles, or use a cake or cookie cutter to get an attractive scallop shape. It is easiest to do a whole line of crowns at once and then cut then into individual crowns.

Roll your crowns to complete them. The swirl of cream will hold them in place.

If you don't feel up to making fondant crowns or are too busy , you can buy paper or plastic crowns instead.

Hot Tip - Let Cupcakes Cool

Let your cupcakes cool on a wire rack before you try to decorate them.

Hot Tip - Test if Cooked

To test whether your cupcakes are fully cooked prod one with a toothpick. If this is pushed into the cake it should come out clean when the cupcakes are ready. If there is cake mix stuck to the toothpick, the cupcakes need to bake for a little longer.

Chocolate Cupcakes

There are plenty of chocolate recipes. Here is a failry simple one. You could also add chocolate chunks to the final mixture. Chocolate recipes can take some refinement as the chocolate you use might be more or less bitter and might have been sweetened. Experiementation will probably be needed.

Ingredients for
about 30 cupcakes
 1¼ cups plain cake flour (not self-rising)
 2¼ cups sugar
 8 eggs
 12 ounces (350g) butter
 1½ teapoons baking powder
 ¼ teaspoon salt
 8 ounces (200 grams) 85% cacao (or bittersweet cooking chocolate)
 ¼ cup unsweetened cocoa powder

MethodPrepare by pre-heating the oven to 350 degrees and line a cupcake tray with cake liners
Melt the chocolate and butter in a bain marie - put the bowl over a pan of simmering water
Remove from the heat, stir in the sugar and allow to cool
Mix the dry ingredients together
Slowly mix the eggs into the chocolate then add the flour mixture
Scop into the prepared cupcake pan. Don't overfill - 2/3 full is sufficient
Bake for 20 - 25 minutes until cooked, rotating once midway. Leave to cool on a wire rack

Gluten Free Cupcakes

If you need to make gluten-free cupcakes, replace the usual flour from your favourite recipe with gluten-free quinoa flour. You might wish to add a small amount xanthan gum (maybe ½ - 1 teaspoon depending on your other quantities).

metal pans are way easier to handle :) the risk of spilling decreases a LOT! and I know it cause I had some bad experiences with silicone cupcake pans :)

Cupcakes Overflowing?

To stop your cupcakes overflowing the pan and burning you should:

  • Only fill the pan 2/3rd full so the cupcakes have space to rise

  • Pre-heat your oven to 25 degrees over the cooking temperature. Turn it back down when you put your cakes in the oven.

Cupcake Liners and Wrappers

Liners are the cheap paper lines in which you bake your cupcakes. You need theses.

Wrappers are for making your cupcakes look pretty. They are optional but can be reused (if saved).

Pink Princess Cupcake Wrappers

You can obviously buy cheap paper wrappers for your cupcakes but I just adore these pink princess paper wrappers. They are relatively expensive but they really do make your princess cupcakes look professional. If you don't like them, there are other stylish wrappers available. Remember that you will need cake papers to cook them cupcakes in: just pop them in the wrappers after they have been baked.

Basic Vanilla Recipe

The starting point for your fairy cupcakes

Use any one of the menu cupcake recipes on this lens such as the delicious chocolate recipe, but a simple vanilla cupcake recipe is sufficient. For fairy cupcakes the magic is in the decoration.

Ingredients for

Then decorate your fairy cupcakes. You might add fondant figures or if, you want something simple, why not just use a buttercream topping and make it sparkle with some of the sparkly bits.

Add some edible glitter

Children love things that sparkle. So do many adults. This is the very easiest decoration as all you need to do is sprinkle the magic fairly dust on to your cupcakes. If you want large areas of gold color, then why not make gold fondant cake decoration?

There are a lot of cupcake videos out there but this is one of my favourites because it packs in so many tips. There is no distracting commentary, the video just shows you decorating tip after decorating tip. I have a lens which has gathered together the best frosting and fondant recipes if you need any help making buttercream icing or fondant.

Rainbow Cupcakes

Perfect for Magical Fairy Cupcakes

Rainbox cupcakes are super fashionable but as this video shows they are very easy. I spotted one swear word in the annotions right at the start to so you might not want children to watch the first 30 seconds or so. I would swap video but I think this one is very good at explaining how to make rainbow cupcakes. The last couple of minutes just shows the finished cupcakes so you can skip this section if you want.

The video demonstrates the method using a box of cake mix but you could adapt your favourite cupcake recipe instead. You might also want to keep these for a special treat as a large amounts of food coloring aren't for the health-conscious.

Rainbow cupcakes work well with a fairy theme but as they are so colorful you might decide that they don't need any decoration at all!

Fill Cupcakes with Butter Cream Icing

Using an icing bag you can push butter cream icing (frosting) into the centre of your cupcakes. Make the whole in the top so that it will be hidden when you frost your cupcakes.
