Pumpkin Parfait, Anyone?

Ingredients

• 3 tbsp butter
• 3 tbsp brown sugar
• 1 cup graham wafer crumbs
• 3/4 cups canned pumpkin
• 1/2 tsp cinnamon
• 1/8 tsp nutmeg
• 1/8 tsp ginger
• 1/8 tsp allspice
• 1/4 tsp salt
• 1 1/4 cups milk
• 1 pkg butterscotch instant pudding (3.5 oz)
• 3/4 cup heavy cream (whipped)

Instructions

1. Melt butter in a heavy saucepan. Stir in sugar and cook over medium heat until thick (5 minutes). Add crumbs, stirring until thoroughly coated. Spread thinly on cookie sheet. When cool, crumble.

2. Combine pumpkin, spices, salt, and milk. Sprinkle pudding powder over pumpkin mixture and beat well or until smooth.

3. Whip the cream.

4. Place alternate layers of pumpkin, whipped cream or topping, and wafer crumbs in tall parfait glasses, having crumbs on top. I did two sets of layers.

5. Refrigerate.
