Pumpkin Parfait Recipe
Just before getting married, my Mom gave me a book that contained favorite recipes from both my mother and mother-in-law, (Marjorie and Margory). This is such a treasured book since it has my Mom's own handwriting and she has been resting in peace for 25 years now. This recipe is from my mother-in-law, also passed, and I've entered it into the Squidoo Thanksgiving Cookoff (for Charity). If it gets selected, the charity I support - Earthjustice - gets $1000. I hope you enjoy -- and if you do, don't be shy, spread the word!

Here are the Ingredients
20 minutes - 5 servings
3 Tbsp butter
3 Tbsp brown sugar
1 cup graham wafer crumbs (coarsely crushed)
3/4 cup canned pumpkin
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
1/8 tsp allspice
1/4 tsp salt
1 1/4 cups milk
1 package butterscotch instant pudding (3.5 oz)
3/4 cups heavy cream, whipped OR subsitute
You'll Need Parfait Glasses and Spoons
Step 1 - Make the Crumbs

1. Melt butter in a heavy saucepan. Stir in sugar and cook over medium heat until thick (5 minutes). Add crumbs, stirring until thoroughly coated. Spread thinly on cookie sheet. When cool, crumble.
Step 2 - Make the Pumpkin Filling

Combine pumpkin, spices, salt, and milk. Sprinkle pudding powder over pumpkin mixture and beat well or until smooth.
Step 3 - Whip the Cream, then Assemble

Whip the cream. Place alternate layers of pumpkin, whipped cream or topping, and wafer crumbs in tall parfait glasses, having crumbs on top. Refrigrerate.
I did two sets of layers in my example.
