Bakerella's Pumpkin Pie Bites Recipe
Without a doubt, Bakerella is one of the most creative persons I've known. She creates unique and delicious treats and goodies. One of my favorite things from Bakerella is that she loves to bake in mini sizes or bite sizes. Her bite size cupcakes are a hit, but now Bakerella has come out with a new cute dessert: Pumpkin Pie Bites! These are so cute and delicious, it's very hard not to eat them all. Here I will share with you Bakerella's Pumpkin Pie Bites recipe and directions on how you can too bake these. They are perfect now for the Fall. Bake them for Thanksgiving or even Halloween. * 2 Refrigerated ready-to-roll pie crust
* 1/2 Cup of Sugar
* 8 oz. Cream Cheese (room temperature)
* 1 Cup of Canned Pumpkin
* 1 teaspoon of Vanilla
* 3 eggs
* 1 teaspoon pumpkin pie spice

Get your ready to roll your pie crust from the refrigerator and roll it to make it thinner than how it comes. Use your pumpkin shaped cookie cutter and start cutting the pie crust into little pumpkin pie.
With your mini muffin pan, place each little pumpkin pie crust into the mini muffin molds.

When placing your pumpkin pie crust into your mini muffin molds, make sure that the stem is sticking out and try not to let them touch or get to close. Make 12 pies at the same time.
* With one of the eggs, just using the egg white, brush the top of your little pie crust with your egg whites, before putting the pumpkin pie inside. This will make it look golden brown.

- This is a Unique idea, I will have to give it a try, I am just used to the traditional Pumpkin Pie. These look very nice and there is less cutting to be done. ;)
