Roasted Pumpkin Seed Recipe

PLACE the pumpkin seeds in a colander as you clean the inside of your pumpkin. You can use scoops but it is more fun with your hands.

RINSE the pumpkin seeds under cold water to get off any pulp or any other guts of the pumpkin!

PICK out the pulp and strings. Yea, not all of it will be removed when you wash it off. So, dig in and clean it out.

PREPARE the water with the salt. What you want to do is put the water in a skillet with a lid. Add water until it is about half full. Then, add salt, stirring while you add the salt, until the salt will not dissolve into the water anymore. At that point you have a saturated salt-water mixture.

BOIL seeds in salted water for 20 minutes. This will make sure that the pumpkin seeds are salty on the inside too!

PLACE seeds in a single layer on a cookie sheet and allow to dry thoroughly. Or you can lay them out on paper towels and newspaper - just spread them out to dry.

MIX seeds with 1 tablespoon butter and 1 tablespoon olive oil and salt or other seasonings to taste.

PLACE the pumpkin seeds in a single layer on an oiled baking sheet.

BAKE at 325° until toasted, about 25 minutes, checking and stirring after 10 minutes.

EAT warm from the oven, or cool and store in an airtight container.

If you really want to spice up your Pumpkin Seed Recipe, consider adding some of the flavor combinations listed below. To add these to the pumpkin seed recipe above, just add them after you add the butter and oil.

My Favorite - Add some cinnamon, a bit of sugar (white or brown is fine), and some salt.

Vampire Cure - Garlic salt - it will also keep your cold away, as garlic is a natural antibiotic (works wonders!)

Some call this one the 'Chex Mix' - add Worcestershire sauce (what a great name!) and some Vampire Cure (garlic salt). Quite a combo.

For the sweet-tooth and the one that prefers thanksgiving to halloween - Brown sugar and pumpkin pie spice

Need some spice? Try them with cajun seasoning

Want to cry over them? Take some salt - and add your favorite hot sauce (Tabasco sauce, Hot sauce, wing sauce, burn-your-face-off-hot-sauce)
