Time To Start Thinking About Homemade Pumpkin Soup
Are you looking for a pumpkin soup recipe made from scratch? My recipe is not only delicious, it's also very easy. It is cooked in a crockpot or slow cooker, making it a set and forget dish. Although it can be cooked on the stovetop, I love coming home to find dinner is already cooked.
There's something very cheering about a steamy, hot cup of soup on a chilly winter's night. It always seems to me that those tantalizing aroma's coming from the kitchen, are somehow more enticing in the cooler weather. Even if you didn't think you were hungry!
I'll add more recipes for pumpkin soup from fresh pumkins if I find any that I really like. Especially if the're nice easy ones.

Pumpkin Soup Recipe
This is so easy!

Ingredients
- 90 g (3oz) butter
- chopped parsley
- grated nutmeg to taste
- 1 tablespoon plain flour
- 2 cups milk
- 3 cups chicken stock
- 1 small onion
- chopped
- 1 kg (2 lb) butternut pumpkin
- peeled and chopped
Instructions
In a heavy pan melt two-thirds of the butter. Add the pumpkin and onion, cover and cook gently for about 10 minutes.
Place in the crock-pot with the chicken stock, cover and cook for 6 to 8 hours on Low setting. Puree in an electric blender or push through a sieve. (Actually I like to use my stick blender for this job). If you don't have a blender you can try using a potato masher to do the job.
Return to the crock-pot and add the milk, remaining butter blended with flour. Season with salt, pepper and nutmeg to taste. Stir well, cover and cook on High for 20 minutes or until thick and hot.
Serve with croutons or crusty bread and sprinkled with chopped parsley.

I don't own this particular slow cooker but it's on my wishlist. I've had my old crockpot for about 30 years and it's due for replacement (poor thing).
What I like about this model of the Hamilton Beach slow cooker is the 3 cooking options - program, manual and probe. The program mode cooks for a set amount of time and then goes to keep warm so it doesn't overcook. The manual setting has the familiar high and low settings and the probe is good for large cooks of meat. When the correct internal temperature is reached it goes to keep warm. It has a LED control panel and has a stainless steel exterior.
I use my old cooker a lot and with the versatility of this one I'm sure it will get well used. (Well there's always Christmas - right!! Hint).
If you feel the above cooker is a bit too large for your needs, you should take a look at this model.

This one is very much like my old crock pot. It has high, low and off settings, making it much more basic but still highly functional. I was very happy with my old one which I have been using for a very long time so I think you would also love this.
A Stick Blender Is A Very Useful Tool

A stick blender can be a very handy tool for blending soups and many other things. I wouldn't be without mine. No messing about pouring your soup into a big blender. Then the saving on the washing up afterwards. I'm all for things that make life easier and I find this is one of those really useful gadgets.

This stick blender is great. You can use it to blend soups, puree fruit and vegetables (good for pureeing baby food), mix pancake batter to name a few. It has a 200watt motor and is easy to clean (that's a plus in my book).
Homemade Pumkin Soup

What could be better on a cold winter's night, than a steamy hot cup of home made pumpkin soup? Not only does it look appetizing, it tastes great too.
Pumpkin soup seems to lend itself well to Halloween and Thanksgiving dinners. Well, all the way through the cooler months really. Don't forget - home made pumpkin soup is delicious and so simple! Pumpkins are just so versatile.
Savory Pumpkin Soup Recipe
Ingredients
- 500g (1lb) kent or butternut pumpkin
- 1 450ml (14oz) can of tomato juice
- 1 tablespoon of raw sugar
- 6-8 cups of chicken or vegetable stock
- 1 bay leaf
- salt and pepper
- a few drops of Tabasco sauce
- 1/2 cup of cream
- chopped fresh parsley
Instructions
Peel and cut the pumpkin into chunks.
Combine all the ingredients, except the cream and parsley, in your crockpot.
Cook for approximately 5 hours on Low setting. If cooking on the stove top, just cook until the pumpkin is tender.
Remove the bay leaf and puree in a blender. (This is where a stick blender comes in real handy).
Stir in the cream and allow the soup to re-heat. Serve with crusty fresh bread and sprinkle with parsley.
