Pumpkin Squares-- A Thanksgiving Family Tradition
When I think of Thanksgiving, I think of things I am grateful for, getting together with extended family, and pumpkin squares. Ever since I was a young girl, my family has always made this pumpkin dessert center-stage at our family get-togethers. It is a nice twist on the traditional pumpkin pie, and is easy to make.
The Ingredients

1 package of yellow cake mix
1 can of pumpkin pie mix
3/4 cups of butter
3 eggs
2/3 cup of milk
1/4 cup of sugar
1 tsp. cinnamon
Step 1: The Crust

You will need the yellow cake mix, 1/2 c. of butter melted and 1 egg.
First reserve 1 cup of the cake mix for the topping.
Combine the remaining cake mix with the melted butter and the egg.

I love my Pyrex measuring cups! I have several in various sizes. My favorite is the 8 cup measuring cup because I can also use it as a mixing bowl or store batter in the fridge with the lid. I consider this one of my essential cooking items.
Step 2: Spreading the Crust


Once you have mixed the dough well, you will spread it evenly over a 9x13 cake pan. The easiest way is to use a sandwich baggie over your hand and press the dough across the bottom of the pan. You will think that it cannot possible cover the bottom of the pan. I think that every year--but it does.
Step 3: Mixing the Pumpkin Square Filling

For the filling you will need the can of pumpkin pie mix, 2 eggs and 2/3 cup of milk.
Mix the filling and pour on top of the crust.
Step 4: Preparing the Topping


For the topping you will need the cup of reserved cake mix, 1/4 cup of sugar, 1 teaspoon of cinnamon, and 1/4 cup of butter.
Mix the cake mix, sugar and cinnamon. Cut in the butter until the mixture is crumbly. Sprinkle over the pumpkin mix layer.
Bake for 40-50 minuteas at 350 degrees.
Serving Pumpkin Squares

After it is done baking, chill for at least an hour. Cut into squares and serve with a swirl of whipped cream. Oh this dessert tastes so good the next day too! We've been know to eat it for breakfast the day after Thanksgiving.
