Recipe: Pumpkin Spice Bran Muffins

If you think that plain bran muffins are too blah, or perhaps you think they're too sweet, then these pumpkin bran muffins are for you. They use half the sugar of a regular bran muffin recipe, and none of the fat. Plus, the pumpkin and the spices just give the muffins a really yummy flavor.

The Ingredients

Pre-heat oven to 375 degrees

1 1/2 C. Wheat Bran

1 C. Buttermilk (or 1 C milk with 1 TBS lemon juice)

1 C. Canned Pumpkin (about 1/2 can- other half can be frozen for later use)

1 Egg

2/3 C. Brown Sugar (lightly measured- not packed)

1/2 tsp Vanilla Extract

1 C. All Purpose Flour

1 tsp Baking Soda

1 tsp Baking Powder

1/2 tsp Salt

Optional Spices:

1/4 tsp Nutmeg

1/2 tsp Cinnamon

1/4 tsp Ginger

Pinch of Clove

“By smelling the mixture, you can judge how much spice is needed. If it smells spicy, it is spicy.”

The Directions

In a medium bowl, mix wheat bran and buttermilk (or soured milk) and let sit for 10 minutes.

In another bowl, beat pumpkin, egg, brown sugar, spices, and vanilla until well blended. Add mixture to the bran mixture.

Sift together flour, baking soda, baking powder, and salt. Mix all till just blended.

Add additional spices if desired, and spoon mixture into muffin tins.

Bake in preheated oven for 15-20 minutes.

Makes 1 dozen bran muffins

On Additions

Chocolate goes with everything, but not as well with pumpkin as with others. You could also add raisins (I recommend white raisins), or chopped nuts.

Use about 1/4 cup to start, and add more if desired just before baking.

    I've been looking for healthy pumpkin bread or muffin recipes, and just made these. The are wonderful! I live overseas where no bran is available, so I substituted oatmeal for the bran, soaked it in the sour milk and everything. They came out very delicious with an excellent texture. This recipe is now a favorite. I wonder if it will work as a bread, too?

    Thanks Jarret! They are really good. Just make sure you mix the batter really well because chunks of pumpkin? Not so tasty.
