Purple vegetables are health-giving

Their benefits are great.

I have found twenty-one purple vegetables to share with you.

This lens was a quest challenge lens, and I had great fun finding vegetables that were purple!

Clarence the Cuttlefish

needed some help

He needed to find festive purple pumpkins.

I didn't find a purple pumpkin, but I did find many, many purple cousins of the pumpkin, and I displayed them on this festive lens just for him.

Red (purple in colour) cabbageRed cabbage is an excellent source of vitamins A, C, and K.

Contains two types of phytochemicals (indoles and sulforaphane) thought to play a role in preventing some types of cancer, particularly breast cancer. These chemicals known as help the body to detoxify and break down estrogen so it's excreted and therefore less likely to stimulate the development of breast cancer.

The best way to prepare red cabbage to preserve its vitamins and phytochemicals is to lightly steam it or eat it raw.
