Fabulous Spinach Quiche Recipe with Ricotta Cheese

I am so excited about this recipe that I decided to create a lens just to spread the word. I have been looking all over for a quiche recipe using healthier ingredients, without the unwanted fat and cholesterol, but at the same time I also wanted to preserve the rich quality of the quiche. My picky husband had three slices in one sitting, and he normally doesn't care for quiche!

Are you ready to make this fabulous quiche?

What you will need:

For the Filling:

1 cup diced onions

2 tablespoons margarine (like Smart Balance or no-cholesterol margarine)

pinch of thyme

pinch of nutmeg

1 15 oz. container of ricotta cheese (Healthy Alternative: low-fat or part skim)

1/2 teaspoon salt

3 large eggs, beaten (Healthy Alternative: 3/4 cup Egg Beaters or egg substitute)

1 10 oz. box chopped frozen spinach, thawed and wrung dry (you can also use 1 cup of fresh spinach, cooked, drained and chopped)

1 cup low fat grated cheese (monterey jack, cheddar, swiss, or your favorite cheese)

For the Crust:

1 Pillsbury pie crust at room temperature - recommended option. You can't go wrong with this crust.

For the Topping:

1 cup or 8 oz. low fat sour cream

Hardware: (per the great Alton Brown)

1 9 inch deep dish pie pan (at least 1 1/2 inches deep). Spray with Pam or non-stick vegetable oil spray.

What To Do Next

Ok, let's do this!

1. Preheat oven to 375 degrees.

2. Place pie crust in pie pan. Fold edges under and crimp.

3. Saute the onions in margarine until clear and golden brown, around 8-10 minutes. Stir in nutmeg and thyme. Set aside.

4. In a large bowl, combine ricotta cheese, eggs or egg substitute, salt, spinach and grated cheese. Add the onions and mix thoroughly, and spoon in to prepared pan.

5. Spread the sour cream on top of the quiche filling using a spatula or the back of a spoon. Sprinkle with paprika if desired.

6. Bake in preheated oven at 375 degrees for approximately 50 minutes or if quiche appears set almost all the way into the center, and the pie crust turns golden brown. Remove from oven and cool for about 30 minutes. There may be some cracks on the sour cream topping. No worries - it will taste great just the same!

This recipe will yield about 8-10 servings. Enjoy!

Why is this dish so good?

If you are a quiche lover, this is a "must" recipe for you. This is a personal favorite, and the sour cream totally makes this dish. The sour cream topping complements the ricotta and simply melts in your mouth. If you want to go all out and not count calories, you can use the "fully leaded" version of sour cream instead of the low-fat or fat-free varieties. If you are watching your cholesterol levels, definitely go for the Egg Beaters or egg substitute instead of real eggs. If you love cheese but don't want the fat, choose mozzarella, parmesan or provolone or a "reduced fat" variety.

If you want more stuff in your quiche...

Throw in some diced ham or turkey, mushrooms, bell peppers, green onions, whatever you like. Be creative!

Note on Pie Crust

If you really want to make your own pie crust, try using white whole wheat flour. It's high in fiber but looks and tastes just as great as regular white flour!
