A Gentle Bite

It's so hard to find recipes for just two people. Everything is usually for three, four or more. Which is fine if you are looking for leftovers. But sometimes you just want something simple, refreshing and easy to clean up.

This is one of our favorite quick and easy soup recipes that has a tiny bit of bite.

The Ingredients

2 chicken thighs, boned and skinned
1 tbsp olive oil
1 cup No Yolk egg noodles
1 medium onion, sliced
3/4 cup diced red pepper
1 clove of garlic, minced
1 tbsp soya sauce
2 cups water
2 tsp vegetable stock mix
1/8 tsp cayenne pepper
2 pinches of pepper flakes

The Directions

Slice chicken into strips. Heat olive oil in pot large enough to hold 3 - 4 cups of liquid. Add chicken and cook until no longer pink on the outside (about 2 or 3 minutes).

Add onions, red peppers, and garlic. Stir. Scrap any chicken off bottom of pan.

Add 2 cups of water. Bring to boil and add vegetable stock, stirring until stock is dissolved. Add soya sauce and spices. Let simmer 2 minutes.

Stir in dry no yolk egg noodles. Reduce heat, cover and simmer. Continue to check soup, stir and check noodles. These noodles cook up really fast.

Divide into to deep soup bowls and serve with warm rolls and a bowl of fresh peaches.

    My husband works the PM shift and I work days. I like to make a pot of soup and leave it for him. It's a better option than eating sandwiches every night.

    Looks delicious....and some bitesized chunks of squash would add a a nice contrasting texture (like I know what I'm talking about) and a big slug of beta carotene. Wish I had a bowlful right now! Lensrolling t6his one to my Laftovers food magnets lens.
