Quick & Easy Guilt-Free Healthy Dessert Recipes

 

Whether you're on a diet or just looking to eat healthier, there's no reason to give up dessert. Below are recipes for quick and easy to make delicious desserts that are healthy and guilt-free too! Please feel free to add your own dessert ideas and recipes in the feedback area at the bottom of the page.

Fast Fruit Tarts 

6 tablespoons apricot preserves
1 (3 1/2ounce) container commercial fat-free vanilla pudding
6 miniature graham cracker pie crusts (such as Keebler)
1/3 cup sliced strawberries
1/3 cup blueberries
1/3 cup sliced peeled kiwi fruits

Place preserves in a small microwave safe bowl, microwave at high for 1 minute or until melted.
Spoon 2 tablespoons pudding onto each crust and top each serving with fruit.
Spoon 1 tablespoon preserves over each tart.
Chill until ready to serve.

Servings: 6

Red, White And Blue Parfaits 

1 8-ounce carton vanilla low-fat yogurt
1/4 teaspoon almond extract or 1/2 teaspoon vanilla
1/2 of an 8-ounce container frozen light whipped dessert topping, thawed
3 cups fresh raspberries and/or cut-up fresh strawberries
3 cups fresh blueberries

In a large bowl, stir together yogurt and almond extract or vanilla. Fold in whipped topping.

To serve, in six 12-ounce glasses or dessert dishes, alternate layers of the berries with layers of the yogurt mixture.
Servings: 6

Frosty Banana Pops 

6 firm, peeled bananas
Plate of honey
Plates of chopped nuts, shredded coconut, and cookie crumbs
12 popsicle sticks
Method
1. Cut each banana in half crosswise. Insert popsicle stick in the cut end of the banana.
2. Brush honey over banana with a pastry brush.
3. Roll each banana into desired topping(s).
4. Arrange on plate; cover with plastic wrap. Store in freezer until ready to eat.
Servings: 12

Blueberries With Banana Sauce 

12 ounces fresh blueberries, rinsed and drained
1/3 cup skim milk ricotta cheese or part-skim ricotta cheese
1 teaspoon lemon juice
1/2 medium banana, peeled and sliced
2 tablespoons low-fat vanilla yogurt (or fat free)
1 1/2 tablespoons sugar

In food processor or blender, combine all ingredients except blueberries. Process or blend until very smooth, about 2 minutes.
Place blueberries in a large bowl, or divide among 4 serving bowls.
Pour banana cream sauce over blueberries and serve.
Servings: 4

Strawberry Yogurt Split 

1 banana
4 oz. (1 cup) fresh strawberries
4 oz ( ½ cup) vanilla yogurt
1 Tbsp. chopped, toasted almonds

Peel and split 1 banana.
Place banana halves in serving bowl.
Top with strawberries, yogurt, and almonds.
Servings: 1

Orange Flowers With Raspberry Sauce 

4 oranges
1/2 cup low sugar raspberry jam
2 tablespoons hot water
1 tablespoon of honey

Carefully remove the peel from the four oranges.
With a serrated knife, cut tic-tac-toe slices in the top of each whole orange, being careful not to cut all the way through.
Place the oranges on serving plates.
Spread the orange "petals" apart, leaving the center "stamen" in tact.
Combine the low sugar raspberry jam with the hot water and honey. Drizzle sauce over the orange flowers and garnish with mint.
Servings: 4

Crispy Rice Fruit Balls With Almonds 

1/2 cup whole almonds, toasted
1/2 cup raisins
1/2 cup dried apples
1/2 cup dried figs, stemmed
1/2 cup pitted dates
2 tbsp orange juice
5/4 cup crispy rice cereal

In food processor, blend almonds, raisins, apples, dates and figs to form paste.
Add orange juice and mix well. Place in shallow dish. Scoop out a teaspoon of almond mixture and roll into balls. Roll in cereal to coat.

Frozen Raspberry Desserts 

2 (3 1/2 ounce) cartons fat-free vanilla pudding
1 cup frozen reduced-calorie whipped topping, thawed
1/2 cup raspberries

Line 8 muffin cups with paper muffin liners.
Fold together all ingredients.
Divide mixture evenly among muffin cups; cover and freeze at least 2 hours.
Remove dessert 10-15 minutes before serving so it will be easier to eat.
Serve with sugar-free vanilla wafers
Servings: 8

Vanilla Fruit Salad 

2 sliced bananas
1.5 cup seedless grapes, halved
1 20 oz can pineapple tidbits
2 cups strawberries, chopped
1 packet fat and sugar free vanilla instant pudding

Sliced and cut all fruit as necessary. Drain juice off of pineapple tidbits, put juice in bowl. Mix fruit together. Add vanilla pudding mix to pineapple juice. Blend, and mix in with fruit.

White Chocolate Mousse With Berries 

1 small box (1 ounce) sugar-free instant white chocolate pudding
2 cups nonfat milk
2 cups nonfat whipped topping
2 cups fresh berries (or frozen, thawed) such as raspberries, blueberries, or huckleberries

In a medium bowl, mix pudding with milk. Stir constantly with a wire whisk for 2 minutes. Refrigerate for 5 minutes. Add whipped topping and mix well.

Layer mousse with berries in a serving bowl or individual parfait glasses. Be sure to save some berries for the top.

This is ready to eat or you can refrigerate it and serve later.
Servings: 8

Chocolate Banana Split 

Halve banana lengthwise. Melt bittersweet chocolate pieces in microwave; spread over banana. Top with scoop of your favorite flavor of low-fat frozen yogurt.

Just Peachy 

Slice a fresh peach in half. Remove seed; top cut side of each half with low-fat peach, french vanilla, or other yogurt flavor and sprinkle with sliced almonds.

Almond-Stuffed Pears 

2 small ripe pears
2 tablespoons slivered almonds
2 teaspoons almond extract

Garnish
Mint leaves (optional)

1. Cut the pears in half and remove the center.
2. Make a thin slice on the rounded side so that it will sit flat.
3. Toast the almonds in a toaster oven until golden.
4. Put the pears onto small plates and sprinkle extract in the center of each.
5. Spoon almonds in the center.

Try substituting the almonds with your favorite nut.
Servings: 2

Orange Fluff 

1½ cups Smucker's Sugar Free Orange Marmalade
1 cup Smucker's Sugar Free Apricot Preserves
1 (16 oz.) container low fat cottage cheese
2 (3 oz.) packages sugar free orange flavored gelatin mix
1 (16 oz.) frozen "lite" non-dairy whipped topping, thawed

1. In a large bowl, combine the marmalade and preserves; mix together with the cottage cheese.
2. Add the dry, orange flavored gelatin powder and stir until well blended.
3. Fold in the thawed whipped topping and refrigerate mixture for at least one hour.
Servings: 8
