I love rainbows. When asked what my favorite color is, I tell folks that it is the rainbow. Not only do I prefer seeing the entire rainbow over any one isolated color, but when I am feeling drawn towards a particular shade or hue, it is mood dependent and rarely the same color twice. I am not sure what that really says about me but, I just chalk it up to being an artist and then we, I mean I, move on to discussing other things. The only thing that I can imagine being better than seeing a rainbow (or a double or triple one) is eating one. So, I bent my tiny mind and whipped up some recipes that you can use to serve up an entire rainbow meal - from salad to dessert, for St. Patrick's Day or any other day when you're feeling particularly colorful.

Rainbow Pasta Salad

6 to 8 servings.
12 ounces whole grain pasta
2 medium tomatoes, chopped
1 small orange pepper, chopped
1 small summer squash, sliced
1 cup fresh broccoli, flowerets
6 fresh basil leaves, finely chopped
1 C blueberries
1 cup purple (red) cabbage, shredded
1 cup onion, chopped
1 cup fresh mushrooms, sliced
1 cup black olives, pitted & sliced
Fresh basil leaves as garnish

Cook the pasta according to the directions on the box, drain, and rinse in cold water.
Toss with the remaining ingredients, cover, chill, re-toss and serve.

Rainbow Salmon over Rice

Serves 8
2 C. brown rice, cooked (to make 4 C)
extra virgin olive oil
Rosemary, chopped
Clove, ground
2 lbs. salmon fillet
1 medium red bell pepper, chopped
1 medium mango, chopped
1 medium carrot, thinly sliced
3 green onions, chopped
2 C purple (red) cabbage, shredded
Orange Juice

Preheat your oven to 350 degrees. Lightly coat the bottom of a 9x13 baking pan with a thin layer of extra virgin olive oil and place the salmon fillets, skin down, on top of it. Lightly sprinkle the tops of the fillets with the ground clove and generously sprinkle with rosemary, then rub the herbs into the flesh of the fish. Add the vegetables by placing them around the fish. Pour in the orange juice until it just covers the top of the fish and vegetables. Bake at 350 degrees for 15 minutes. Portion out onto a bed of rice, garnish with a sprig of rosemary, and serve.

Rainbow Juice Punch (soda free)

For Your Love Poster2 qt. cranberry juice
2 c. pineapple juice
2 c. orange juice
1 c. apple juice
1 pt. rainbow sorbet

Mix juices in large punch bowl. Scoop sherbet into punch bowl. Add ice. Serve. If you want to make it less healthy, just add soda. Either lemon-lime or ginger ale, or both, will work. I just can't, in good conscious, tell anyone to drink that body destroying glop! (Ok, off my soap box and on with the rainbow ride!)

Rainbow Fruit Salad

A healthy dessert

Color Stripes Poster2 C sliced fresh strawberries
2 C sliced fresh mango
8 oz. fresh pineapple
2 C fresh kiwi slices
2 C fresh blueberries
2 C fresh purple grapes, halved
6 fresh mint leaves, finely chopped
juice of one lemon

Clean and prep all of your fruits, add the mint leaves and squeeze in the lemon juice.
Toss, cover, chill, re-toss, and serve.

Rainbow Layer Cake

Retro Rainbow Cake PosterThe way I see it, you can make this cake one of three ways:

1. Colored Cake
3 boxes of White Cake Mix
6 colors of food coloring

Mix up the boxes of cake mix and separate them into 6 round cake pans using 6 equal portions. Add 4 or more drops of food coloring to each bowl of batter until you achieve your desired color. Bake. Remove from oven and cool. Layer the cake with your favorite white frosting (cream cheese, buttermilk, fondant etc.) and then coat the outside. Either leave the frosting white or decorate it to look like a sky with clouds and a rainbow.

2. Colored Frosting
3 boxes of White Cake Mix
3 containers of white frosting (or make your own)

Mix the cake batter and divide into 6 pans using 6 equal portions. Bake. Remove from oven and cool. While all that is going on, divide the frosting up between 6 bowls, again using equal portions. Add 4 or more drops of food coloring to each portion of frosting until you achieve your desired color. Use one color of frosting between each layer of cake. The 6th color will be what coats the outside (or you can try to make a cake like the one in the picture).

3. Colored Frosting and Cake
Combine the two recipes above. If you wanted to have colored frosting and colored cake and not use one of your colors as the outer frosting, you can add a 7th & 8th layer to the cake: one between the blue and purple and then a white one on top (call it the cloud layer, if you want lol). In the Roy G, Biv spectrum, the layer between your blue and violet would be indigo (bluish purple - just use equal parts of both food colorings). Then just use the remaining half of the 4th cake mix to create the white cloud layer on top of the cake. That way you could frost the outside of the cake in white and then either leave it that way or "paint" a sky on it.

Yes, an 8 layer cake is very tall. There are tricks to making such a cake stand up though, such as slicing the mounded section off of the top of each layer to flatten it before frosting it. Just a thin section will do. Thickening the layer of frosting towards the outsides of the layers helps too. If needed, you could also use 4 kabob skewers, strategically inserted into the layers as reinforcements.
