    Sounds great. I haven't heard of Leeks being called Ramp before though, it's an odd name, but then again so is Leek! A bit like Swede being called Rutabaga I guess. We love Leeks and who doesn't like fried potatoes. Sounds wonderful, with maybe some hot sauce to spice it up a bit :)

    You have managed to sway my interest in cooking ramp. I cringe at the thought of wasting food and watching my grandchildren find, one more reason to say they don't like something. The potatoes will be the "draw" and mask the usage of the ramp. Just hopin'!

    In some versions of the Rapunzel story, ramps were the food that her pregnant mother craved. It was the middle of winter and she said she would DIEEEEEEEEE if she didn't have some, but the only place they grew was in the Witch's garden.

    I have ALWAYS wanted to try ramps. I got some today for my birthday! What an amazing birthday present!! I think mine are younger than yours, though, because they're as thin as young scallions and the leaves on mine are nice and tender. I was told to cut the very tip of the bottom off and that I could eat the rest. Tomorrow for mother's day I'm having ramps and potatoes with free range eggs sunny side up and homemade bread. Mmmmm!!!!

    We used to collect wild ramps when we lived in southwestern Pennsylvania and used them in things like soups and homemade tomato sauce. There was even a ramp festival not far away in W. Virginia, but I never made it down there. It was really popular, I heard.

    I really like your recipe lenses, because I'm so cooking challenged! This looks like an easy one, and I love how you fry it in olive oil, it's the only oil I use. So healthy!

    Those aren't ramps, they're leeks. Ramps have purple-ish stems.

    those are leeks in the recipe pics. the picture in the wikipedia article is right. note the differences.

    Oh my gosh! When I was a kid (over 45 years ago) my family went ramp (we called them leeks) gathering every spring. We ate ramp sandwiches (ramps on bread with butter) ramps in potatoes, just plain ramps with salt, ramps in scrambled eggs (highly recommended!). We were not allowed to eat them during the week or Sunday evening, since the eating of many ramps led to the odor permeating your body and we had school the next day. Some kids were sent home from school if they reeked of ramp odor.

    Now that I have some property, I've been planting ramps in my wooded area. It takes a few years for them to germinate sometimes. I'm just now going to be able to harvest some. That will be in April and I can hardly wait!

    Thanks for a recipe that I haven't tried...but sure will in a few weeks.

    (By the way...where do your ramps come from?)

    I didn't know what a ramp was until I read this. They must be like the leeks we have in our stores in Florida. I think I'm going to try this.

    I dug up close to 15lbs of red potatoes from my garden a couple of days ago...think I just found my first use for some of them. This recipe looks both simple and tasty! :)
