This is another staple recipe in any Gordon Ramsay kitchen. He keeps this chicken stock in his kitchens like you or I keep salt and pepper.

You can use this in any soup or sauce that requires a light but rich chicken flavor, or use it to poach chicken breasts.

Gordon Ramsay Chicken Stock Shopping List

Yield: 1.5 Litres

Gordon Ramsay Chicken Stock Prep

2tbsp olive oil
1 large carrot, roughly chopped
1 onion, roughly chopped
2 celery stalks, roughly chopped
1 leek, sliced
1 thyme sprig


1 bay leaf
3 garlic cloves, peeled
2tbsp tomato puree
2kg raw chicken carcasses (roasted if making brown chicken stock)

Gordon Ramsay's Chicken Stock Procedure

Add Just Enough Water To Cover The Bones1) Put the chicken carcasses into a stockpot, cover with 2½ litres water and bring to a boil. Using a large metal spoon, skim off any white scum from the surface.

2) Add the vegetables, herbs and garlic to the pan. Return to a boil, then reduce the heat to a gentle simmer. Cook uncovered for 2½ hours, skimming occasionally.

Finishing Gordon Ramsay's Chicken Stock

Skim Off Scum Off The Surface With A Ladle3) Strain the stock through a colander into a large pot. Discard all the debris. Reduce the stock by up to half for a stronger flavor, if desired.

4 Let the stock stand for a few minutes to cool slightly and allow the ingredients to settle before passing through a fine sieve lined with damp cheesecloth. Leave to cool and chill, or freeze in convenient portions.
