Beef jerky is lean portions of beef that are cut into thin strips, marinaded and then dried. Beef jerky needs no refrigeration making it an ideal trail food for camping, backpacking and fishing trips. A healthy snack that is low in fat and contains no artificial preservatives. The process of jerking meats provided our ancestors with a way of preserving meats to be used during long journey's across the country. Using different marinades enables you to sample a wide variety of different flavors. Jerky can be made hot and spicy, natural with just salt and pepper or just about any flavor you can think of that would be suitable to marinade beef in. Homemade beef jerky is also inexpensive compared to store bought jerky. Today you can easily make delicious beef jerky using your kitchen oven or a food dehydrator.

Cuts of BeefBeef jerky can be made from relatively inexpensive cuts of beef such as round steak or flank steak. The key ingredient here is to look for a cut of beef that contains little or no fat. Fat on the outside edges can easily be removed.

Food Safety Tips For Making Jerky

The USDA Meat and Poultry safety guidelines current recommendation for making jerky safely is to heat meat to 160 °F and poultry to 165 °F before starting the dehydrating process. This step assures that any bacteria present will be destroyed by wet heat. Most food dehydrator instructions do not include this information, and a dehydrator may not reach temperatures high enough to heat meat to 160 °F.

Following this process is especially important if you are considering processing any type of wild game. Wild game taken by hunters for food consumption is more likely to contain large amounts of bacteria than commercially processed beef and poultry due to different handling procedures and temperatures that the game was stored at prior to processing.
