Recipe "Chicken Pecel Waung" Typical Indonesia

"Chicken Pecel Waung" is the typical food of the East Java area in Indonesia. Difference from the other fried chicken marinade is unique and how to cook.

Ingredients :
1 tail of the chicken (chopped 12)

Seasoning 1:
Spices that :
10 cloves of garlic
8 spring onions
10 small red chili beans
5 walnut grain
4 cm KENCUR
1 flavor packs (if liked)
1 tablespoons of white sugar
salt to taste

Seasoning 2 :
3 half cup of coconut milk
2 lime leaves and bay leaves
2 cm LENGKUAS
1 bunch of basil

Instructions :
1. Clean the chicken, and coat with tamarind water mixed with salt. Let stand for 30 minutes, then bake until half cooked.
2. Saute the spice paste with LENGKUAS, bay leaf, brown sugar, until fragrant, then give the coconut milk and stir.
3. Add chicken, and cook until done, and the coconut milk thickens.
4. Serve with a sprinkling of basil leaves.

What is meant by "KENCUR"?

Kaempferia galanga, commonly known as kencur, aromatic ginger, sand ginger, cutcherry or resurrection lily, is a monocotyledonous plant in the ginger family. It is found primarily in open areas in Indonesia, southern China, Taiwan, Cambodia and India, but is also widely cultivated throughout Southeast Asia. The plant is used as a herb in cooking in Indonesia, where it is called kencur, and especially in Javanese and Balinese cuisines

Efficacy kencur plants are:

Expentorasia, the cure cough with phlegm and makes it easier to dilute the discharge of phlegm.

Diuretica, which is to expedite the process of urine (urine).

Carminativa, which helps the process of spending due to the wind from the stomach bloating / colds.

Stimulant, which is to generate or provide a stimulus.

Protection, which is to protect the clothing or books from insects.

What is meant by "LENGKUAS"?

Galangal (galanga, blue ginger, laos) in indonesia called LENGKUAS is a rhizome of plants of the genus Alpinia or Kaempferia in the ginger family Zingiberaceae, with culinary and medicinal uses originated from Indonesia.
It is used in various Asian cuisines (for example in Thai and Lao tom yum and tom kha gai soups, Vietnamese Hu%u1EBF cuisine (tre) and throughout Indonesian cuisine, for example, in soto). Though it is related to and resembles ginger, there is little similarity in taste.

Galangal potent anti-fungal, anti bacterial, warm, clean the blood, increase appetite, ease expense of the wind in the body, thin the mucus, the scent, stimulates muscles and supposedly potent aphrodisiac.
