My Quinoa Adventures So Far
First, I bought a bag of this at Costco. I knew it was very nutritious and I decided it was time to try it. I cooked a batch of it just like rice and used it to serve with a stir fry dish. The next batch I cooked in broth to see if it was more flavorful, but it turned out I preferred it cooked in the water. Nevertheless, I still had a couple of cups left of that batch, and when I went looking for recipes, I found one on line for Quinoa Black Bean Salad. I just didn't have all the ingredients, and there were some ingredients I don't like. So I decided to use the recipe as a basis for making my own version. What I will share here is the result. We had it as a side dish for the first meal, and then, when I had to be gone a day, I left this with some Creamy Cucumber Salad and Serbian Tomato Salad so my husband could have his own salad bar lunch to take out of the frig when he got home for lunch. (It was a very hot day, so cold foods were in order.)I finished the rest for dinner that night. We liked it, and I will make it again. Have You Ever Cooked with Quinoa?

If you've tried quinoa and want to stock up, this is a terrific deal. This 25-pound bag is pre-washed, and that will save you a lot of work. Quinoa has a bitter coating of saponins that must be washed away through soaking or repeated rinsings. With this product, you will save yourself the time required to do that.
How to Make Quinoa Black Bean Salad
Here is the list of ingredients.
Before you start, be sure and cook your quinoa according to the package directions. Left over cooked quinoa that has been chilled is great.
You will also want to prepare your salad dressing if it doesn't come prepared. I used the dry Good Seasons Italian dressing, so I needed to make it up before I used it.
- 1/4 Cup prepared Italian or other similar salad dressing your family likes, or more, to taste.
- I large green onion, sliced.
- 2 cups cooked quinoa
- One 15 oz can of black beans, rinsed and drained, OR: one cup cooked black beans, rinsed and drained.
- About one cup ripe plum or cherry tomatoes, chopped, or, in the case of the cherry tomatoes, halved or quartered, depending upon their size. You want pieces about the size of a miniature marshmallow. (I made this today and had only canned, diced tomatoes, so used about one cup , drained. Worked out OK, but fresh is better if you have it. )
- One cup bell pepper, any color you choose, or you can mix them. I used a combination of green and yellow. ( I was also out of bell peppers today, so used some very finely chopped young broccoli I had instead. It worked, but I still like it better with the peppers. )
- 2 stalks celery, chopped.
- 1/4 Cup Feta cheese, crumbled
- At least 1/4 cup toasted slivered almonds. I often use more.
Directions for Making Quinoa Black Bean Salad
2.Combine the vegetables, quinoa, black beans, almonds, and feta cheese in a bowl that holds at least one and one-half quarts.
3.Mix the ingredients very well. Pour the dressing over all, and mix thoroughly again.
For best taste, chill for at least an hour before serving and stir once again. This is an ideal salad to make a day ahead and store in the refrigerator until needed.
Next time I make this, I may add one or more of these ingredients just to see what happens: a can of tuna, a chopped hard boiled egg, two slices of crisp-cooked bacon, or maybe even a handful of toasted slivered almonds. Don't be afraid to add anything you think will blend well with the rest of the flavors.
Update: This is now my favorite dump recipe. I have substituted a can of tuna for the black beans, and then added sliced cucumbers, chopped red bell pepper, the chopped celery, the tomatoes, and some sliced olives. It was delicious. I often substitute chunks of pre-broiled chicken strips, which I buy at Costco, for the beans. Now I'm to the place where I start with the quinoa, add a protein source, and enough vegetables that go with the protein source and each other to provide a lot of crunch. I always add the slivered almonds.
Quinoa also comes in smaller, easier to store sizes.

This product is organic, and also comes with the bitter saponins removed for easy use. This is the brand I used. It keeps best in the refrigerator or freezer, so these smaller bags make storage convenient.

- Wow. Quinoa + Black Beans + Almonds + Tuna + Eggs. I wonder how many grams of protein that ends up being.
The last couple of times I've made brown rice, I toss in some Quinoa in the last few minutes. Makes it nuttier.

- ComfortDoc, we don't use all those things at once. I often substitute the beans with cubed cooked chicken, a can of tuna or salmon, or hard boiled eggs. (Haven't actually tried that last yet. ) Today's version contained chopped red sweet pepper, celery, chopped olives, cucumber chunks, and a can of salmon, in addition to the almonds and quinoa. I basically use the quinoa as a base and throw in any combination of ingredients I have on hand that will taste good together. Sometimes that even includes spinach. So whereas we may have the salad once a week, it's rarely the same salad as it was the week before or the week before that.

- Fortunately Ann Arbor has great restaurants, and I lived there for over 20 years. Things like this aren't unusual there, and you can have all kinds of fantastic food you never knew you were missing. Quinoa is one of those dishes.

- I love quinoa and am always telling people to try it ..most have never heard of it but I love it. I usually use it just like rice and mix it with chicken and some veggies like a stir-fry.
