My Favorite Recipe for Sweet Potato Casserole!
Sweet Potato Casserole is a must have at Thanksgiving for my family. I grew up having it, and now I serve it to my own kids. It just wouldn't be Thanksgiving without it! But sweet potato casserole isn't just for Thanksgiving; why not enjoy it year round? Christmas? Valentine's Day? Easter? Tomorrow's dinner? It's quite easy to make, and very yummy!

Sweet Potato Casserole Recipe
Ingredients
- 8 or 9 medium sweet potatoes (about 4 cups of mashed cooked sweet potatoes)
- 1/2 cup of sugar
- 1/4 tsp salt
- 2 eggs
- 1/2 cup water
- 1 tsp cinnamon
- ~~TOPPING Ingredients:~~
- 1 cup brown sugar
- 1/2 cup flour
- 4 tbs of margarine or butter
- 1 cup chopped pecans
- 1/2 bag of mini marshmellows
Instructions
Wash and bake sweet potatoes at 350 F until done (1 1/2 to 2 hours). Allow them to cool for at least thirty minutes. Cut them in half and scoop out the potato into a large bowl. Mash the potatoes with a fork or a hand blender.
Add the white sugar, salt, eggs, and water to the potatoes and mix well. Place the mixture in a large casserole dish.
Mix the flour and brown sugar together. Cut in the margarine or butter, using a fork. After it's well mixed, add the pecans and mix again. Put the topping on the sweet potatoes. Bake at 350 for 30 minutes. Remove from the oven and add a layer of mini marshmallows on the top. Return the casserole to the oven and bake until the marshmallows are slightly browned - around 5 minutes.
Tip 1:
Place a layer of foil under the sweet potatoes while baking them. This will save on clean up later!

Tip 2:
I often bake the sweet potatoes the night before. With this part of the job out of the way, preparing the rest of the casserole is a snap!
If you'll be short of time the following day, why not also go ahead and mash the sweet potatoes, and mix them with the water, sugar, salt, and cinnamon. Store them in the fridge overnight. Just add the eggs the following day, place it in a casserole dish, and add the topping!

- I really like sweet potato casserole ... when OTHER people make it. I SO botched this dish one year, when I tried to make it to bring to a Thanksgiving dinner. Had to make a quick run to the grocery store to get something to bring, because the casserole literally went to the birds.

- I'm a vegetarian and don't use marshmallows because i've never found any that don't contain gelatin. I use marshmallow cream, which I can find without gelatin, in other recipes. I've never tried sweet potato casserole and am wondering if there would be a way to use marshmallow cream with that too or if it would simply melt into a blob.
