Whether its from celiac disease or a wheat or gluten allergy, migraines or autism, it's become important to many that they cut gluten out of their life. This can be difficult as gluten is found in many grains, such as barley, rye, and most importantly, wheat. This, unfortunately, cuts out a large portion of breads that are available on the market. Many stores are starting to carry a variety of gluten-free breads, but they tend to be expensive, and not very tasty. So, more and more people are finding it in the best interest of their health to bake their own gluten free bread.

Recipes For Gluten Free Bread - What about Flour?
Let's talk about some substitutions for wheat flour
Potato flour - often mixed with rice flour for baking.
Tapioca flour (cassava) - very common thickening agent, can also be mixed with other flours for baking.
Soy flour - Because it is high protein, this a good replacement flour made from ground, roasted soybean. Some people find it has an odd aftertaste.
Corn flour - great for pancakes and waffles. Mix with corn meal for muffins or bread.
Corn meal - courser than corn flour, has a stronger corn flavor
White or Brown Rice flour - good general use flour for baking, the brown rice flour has more nutritional value.
Another thing to keep in mind is that gluten is the compound that gives bread dough it's elasticity, and what makes breads so good and chewy. When you're cooking gluten-free, you'll need to add something to replace that. Some common options are xanthum gum and guar - both work well and are available from health food stores.

Recipes for Gluten Free Bread - Gotta Love the Breadmaker!
Just throw your ingredients in and fresh bread is on it's way
This recipe is for a white bread that you can make in your bread maker.
Ingredients:
* 3 eggs
* 1 tablespoon cider vinegar
* 1/4 cup olive oil
* 1/4 cup honey
* 1 1/2 cups buttermilk, at room temperature
* 1 teaspoon salt
* 1 tablespoon xanthan gum
* 1/3 cup cornstarch
* 1/2 cup potato starch
* 1/2 cup soy flour
* 2 cups white rice flour
* 1 tablespoon active dry yeast
Bread Machine Instructions:
1. Follow the manufacturer's instructions when placing the ingredients in the bread maker.
2. Select the sweet dough or gluten free cycle. Check the dough consistency 5 minutes after mixing starts - adjust with flour or buttermilk as needed.
3. Let the bread cool for 15 minutes before removing it from the pan. removing from pan.

Irish Soda Bread
Gluten Free, right from your oven
Ingredients

* 1/2 cup tapioca flour
* 1/2 cup white sugar
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 egg
* 1 cup buttermilk
Instructions -
1. Preheat oven to 350 degrees F.
2. Grease a 9 inch round cake pan.
3. In a large bowl, mix the flours, baking soda, baking powder and salt. Make a 'well' in the dry ingredients.
4. Whisk the egg and buttermilk together in a separate dish. Pour this into the well
5. Pour the egg mixture into the well in the flour mixture. Stir together just until everything is moistened, then pour the mixture into the greased cake pan.
6. Bake for one hour, or until a toothpick inserted in the center comes out clean.
7.Cool on a wire rack for 10 minutes before removing from the pan.
8. Best when served the next day - wrap in plastic wrap or aluminum foil and let stand overnight.
