Buckwheat or corn mush - Ajdovi ali koruzni zganci
Ingredients
- 5 dl water
- pinch salt
- 1 cup buckwheat or cornmeal
- 5 tabllespoons hot lard with cracklings
Instructions
Place water and salt in saucepan and bring to a brisk boil. Keep at the boiling point and add flour, BUT DO NOT MIX. Let it boil for 5 minutes. make a hole in the center of the flour with a wooden spatula and boil again for 10 minutes. Pour off half the water and set aside. Beat and stir mixture well. Add fat and mix. Cover and let stand over low heat for 5 minutes. Iff too dry, add some of the reserve water and mix.
Ajdovi zganci are served together with obaras, meat sauces, sauerkraut, Black pudding, various sausages.

Baked mushrooms with cheese - Gratinirane gobe s sirom

Baked mushroom with cheese is another quick and easy dish to make.
Ingredients
- 1 8oz container of mushrooms
- 1/4 pound of sliced cheese
Instructions
Preheat your oven to 300F. Clean the mushrooms under running water, take out the stems and dry the caps with a paper towel.
Cut the cheese into squares of an appropriate size to fit between two mashroom caps and make a sandwich usind two mushroom caps with one square of sliced cheese in the middle. Secure everything together with a toothpick, and put the mushrooms into a greased baking dish or pie plate. Bake until the cheese melts for about ten minutes or so and then serve either warm or at room temperature.
Best cheese to use is Tolminc, I also use gorgonzola, mozzarella, parmesan,...

Steamed cheese rolls - Sirovi struklji na sopari

Ingredients
- 60 dag white flour
- 1 cup milk
- 1 small packet yeast
- 2 tablespoons sugar
- 3 tablespoons brandy
- 3 tablespoons oil
- 1 egg
- Filling:
- 50 dag cottage cheese
- 2 dl sour cream
- 3 tablespoons sugar
- 1 egg
- 1 tablespoon breadcrumbs
- 1 tablespoon butter
- Topcoat:
- 4 tablespoons honey
- water
Instructions
Make leavened dough (the same as for potica), let it rise, then roll out on a floured cloth. It should be 2 cm thick. Mix all ingrediens for filling. Spread the filling over dough. Roll up and wrap in the cloth. Place it in a steamer and steam about 30 minutes. Cut cooked roll into smaller pieces.
Melt honey in water and sprinkle them or melt the butter with breadcrumbs and pour over the rolls. You can also sprinkle with sugar, and cinnamon.
Instead of cheese filling you can use walnuts filling.
We can eat it like a side dish or as main.

Buckwheat porridge - Ajdova kasa

Ingredients
- 30 dag buckwheat (grains)
- 1 dl sour cream
- 3 cloves of garlic
- crushed
- dash of marjoram
- salt to taste
- water
Instructions
Wash the buckwheat grains and cook them in salted water about 15 minutes.. Water should cover the grains. Add garlic, salt and marjoram. Mix and then pour sour cream over all. Instead of cream you can use hot cracklings.
Serve with mushroom or meat sauce and salad.

Bread dumplings - Kruhovi cmoki

Ingredients
- 1 large loaf of old bread
- cut in cubes
- 2 dl milk
- 1 tablespoon melted butter
- 4 well beaten eggs
- 1 dl sour cream
- 10 dag flour
- 1 tablespoon parsley
- chopped
- 1 tablespoon bacon or roast meat
- shredded
- salt to taste
- salted water
Instructions
Remove outer crust from bread into cubes. Warm milk and pour over the bread cubes. Add melted butter, beaten eggs, parsley, bacon,sour cream and salt. Mix gently and add flour. Shape round dumplings and roll each in flour and let stand for 30 minutes. Bring salted water to a boil and gently place dumplings into boiling water. Be careful not to put in too many at one time. Cook for 10 minutes. When done, remove from water with a perforated spoon.
Serve with paprikash, goulash or any dish with gravy, or as a side dish by sprinkling with buttered crumbs.

Apricot and plum dumplings - Marelicni in cespljevi cmoki

Ingredients
- 2 cups mashed potatoes
- 1 cup flour
- 1 tablespoon butter
- 1 egg
- 1 teaspoon salt
- 15 apricots or plums
- 15 small cubes of sugar
- 3 tablespoons bread crumbs
- 1 tasblespoon butter
Instructions
Mix ingredients and knead until a smooth dough. Roll dough to 1 finger thickness and cut into 15 squares.
Wash, pit and dry apricots or plums and place sugar in center of each fruit. Place one fruit in each square of dough. Fold dough over apricot or plum and roll into a round ball. Cook in boiling water about 15 minutes.
Do not crowd the dumplings. To prepare buttered bread crumbs, melt butter and brown crumbs lightly. When dumplings are done, remove them with a slotted spoon and place on a serving dish. Top with buttered crumbs.
Serve with fruit compote.

Slovenian dried pancakes %u2013 Mlinci

Ingredients
- 1 cup flour
- 2 eggs
- Salt to taste
- some milk
Instructions
Sift flour into a bowl, make a hole and pour in milk, eggs and salt. Make the dough for nuddles and let it stand in a plastic bag for one hour.
Mix well and make buns. Roll out on floured board and make circles. Bake them in oven in low heat. Dried pancakes may stand for several days. Before using them, pour them with soup or some sauce.
You can eate them together with meat and poultry, sauces or crashed in soups.

Blintzes - Sirovi ponvicniki
Ingredients
- 1 cup flour
- 2 eggs
- 1 teaspoon salt
- 3 dl milk
- Filling:
- 30 dag dry cottage cheese
- 1 eggs
- 2 tablespoons sweet or sour cream
- salt to taste
- butter
Instructions
Mix eggs, milk, salt and flour and above ingredients to make a thin batter that can be poured from a pitcher. Pour batter into a small greased frying pan so batter runs around sides of pan. Fry lightly on both sides. Turn out on a cloth. Cut to squares.
Blend the ingredients for the filling and spread on the blintzes. Fold side to side as an envelope and seal well with a fork. Fry in butter until golden brown on both sides. Spoon whipped sour cream over the blintzes before serving
