Well why not salads? Everyone loves salads and they are the main food served with barbeque meats and poultry. Toss a salad together in no time at all and you have a tasty dish to add to your meal.

You can toss together the ingredients for a salad at any time and you can omit or add whatever ingredients suit your fancy.

You don't always have to boil and mash potatoes in order to make a salad because there are so many different kinds you can try.

Endives Apples and Walnut salad recipe

Carrot and Pineapple Salad

Cauliflower Salad

24 Hour Salad

2 beaten eggs
4 tbsp vinegar
4 tbsp sugar
2 tbsp butter
1 cup whipped cream
2 cups grapes
2 cups pineapple tidbits
1 cup mini marshmallows

Cook eggs in a double boiler wuth vinegar and sugar. Beat until thick and smooth. Remove from heat and add butter. Let cool.

When the mixture is cold, fold in the whipped cream, fruit and marshmallows.

Let set.

This recipes is enough for 12-14 servings.

Meat and Potato Salad

3 cups cooked diced potatoes
1/4 cup French dressing
finely minced onion
1 1/4 - 2 cups of diced cooked ham
Sliced radishes or celery
Thick salad dressing
Salt and pepper to taste
3 hard boiled eggs

Cook the potatoes and allow them to cool before you dice them. Sprinkle the diced potatoes with the french dressing and add onion. Let this stand for 30 minutes.

Add the cooked meat and the radishes or celery.

Toss the salad lighty with a thick salad dressing.

Garnish with hard boiled eggs.

Zucchini and Tomato Salad

1/2 cup raw diced zucchini
1/2 cup diced tomato
1/4 cup mayonnaise
1 tbsp chopped chives
1 tsp prepared mustard
1/2 tsp salt
1/8 tsp pepper
Crisp salad greens

Combine all the ingredients, except the salad greens, in a medium bowl. Mix gently. Refrigerate for at least an hour and serve on the salad greens.

Moulded Salmon Mould

1 pkg lemon jello powder
1 cup boiling water
3/4 cup evaporated milk
1/2 cup mayonnaise
1/8 cup vinegar
1 8-oz can of salmon
1 cup diced celery
1 tbsp diced pimento
1/4 cup diced green pepper
1 tsp grated onion
1/4 tsp salt
dash of pepper

Empty lemon jello powder into mixing bowl and add the boiling water. Stir the mixture until the gelatin is totally dissolved. Let cool.

Stir milk in slowly and chill the mixture until it is partially set. Stir frequently while chilling to keep the mixture smooth.

Flake the salmon and remove any bones. Keep the liquid. Fold the salmon and the liquid into the partially set jelly mixture. Add in the rest of the ingredients and turn into an oiled mould.

Chill until set

Christmas Salad

Ingredients:

2 3 -oz. pkg cream cheese
1 cup of salad dressing
1 cup of whipped cream, stiffly beaten
1/2 cup well drained red cherries
1/2 cup well drained green cherries
1 can of crushed pineapple or 2 1/2 cups of fruit cocktail
1 pkg mini-marshmallows or 24 large marshmallows cut in pieces

Directions:

Blend the cream cheese and salad dressing and then blend in the stiffly beaten whipped cream.

Fold in fruit.

Chill until firm and serve each portion on a lettuce leaf.

Dream Whip Pineapple Lemon Jello Salad

Recipe for salad with pineapple, lemon jello and dream whip

Ingredients:

1 pkg Dream Whip
2 small or 1 large pkg of lemon Jello
1 large can of crushed pineapple
2 bananas cut in small pieces
1/2 cup of mini marshmallows
1/2 cup of sugar
2 tbsp. cornstarch
1 egg

Directions:

Dissolve the Jellp powder in two large cups of boiling water. Stir to make sure all the granules are dissolved and then add two cups of icy cold water. Pour the Jello mixture into a 9 X 10 baking pan.

Drain the crushed pineapple and save the juice.

Add the crushed pineapple, pieces of banana and marshmallows. Put in refrigerator to set.

Add enough water to the juice of the crushed pineapple to make 1 cup. Pour into a saucepan and add the sugar, cornstarch and egg. Bring to a boil until the mixture thickens and let cool.

The mix up the package of Dream Whip according to the instructions on the package. Mix the Dream Whip in with the cooled sauce.

Pour this on top of the lemon Jello mixture and refirgerate until set.

    All these salads look delicious but I think the meat and potato salad would be a great twist on the traditional potato salad. I must try some of these! Blessed!

    You have some salads here I've not seen before and am enticed. The salmon mold is especially sounding good at the moment. I wonder if you know that we have a recipe module available to us that provides a printable recipe. Browse all modules, click on all modules, 'R' and the recipe module will be right there for you.

    Some of these salads sound wonderful. I'd really like to try the Zucchini and Tomato Salad. I have never eaten zucchini in a salad before.
