    I was spent about a year in Thailand in the Air Force many years ago and love Thai food. (In fact, we had spicy garlic and basil Thai rice noodles for dinner yesterday.) Will definitely have to try this recipe. Thanks, Julie!

    I wrote down the main ingredients and checked my pantry. All I am missing is the bamboo shoots. I'm wondering what it would taste like with bean sprouts. They'd probably taste too strong. I'll buy some bamboo shoots on Monday when I go visit mum. Love Thai food .. it seems every dish I try has a different flavor. Thanks for the recipe!

    I'd like to try this but I have to tweak the recipe a bit, I can't tolerate soy and I won't eat anything with artificial sweetener, but hopefully it will still taste yummy. I am a big fan of curry, as long as it's not too spicy.

    Yummm! I love Thai curry chicken. I think I can get all the ingredients in the grocery story too, except maybe the Hokan Coconut Milk. But I haven't looked for it. I have some shopping to do. My husband and I are both fans of this dish!

    I don't think I would be allowed to try your red curry recipe. My husband might make me sleep on the couch! He makes excellent med-med hot red curry. Love the topic though. More people should eat curry. The world would be a happier place!

    I love Thai food and curry is one dish I always try at new Thai restaurants. One question on the recipe: can I substitute sugar or honey or agave syrup for the Equal, and if so, how much per packet? I can't eat that stuff ... this red curry chicken recipe sounds YUMMY!

    Oh wow! Looks totally yummy... What a coincidence that John (hubby) and I just made a Thai curry (Green Basil) last night! We actually were instructed by "Manny" - a Thai gentleman who owns "Thai Place" in Windham, Maine (Route 302 for those of you who know the area and are travelling through to or from Portland).

    When we first told him how WE had been making it, he shook his head and said, "No No! All wrong! Get a pen and paper! I'll tell you!"

    It was so simple we could hardly believe it.

    We use Nutiva coconut oil, a couple of tablespoons, and then put the green (or red - whatever your pleasure) curry paste in to sizzle. Then we add the coconut milk and basil (Thai basil if you can find it). Then, the chicken, fish sauce (very important - about 2 Tblsp), and sugar. Let that cook a bit, then add the veges - we put in green beans, sliced red bell pepper and some onion, sliced.

    Done in minutes! Ab fab!

    There were no leftovers... :) Hugs, Kath

    I love red curry chicken but haven't had the nerve to try making it myself. Of course, since I'm the only one in the house who would eat curry, I'm not sure it's worth making. Looks like a great recipe, though!

    I can put red curry sauce on anything. Best turkey I ever had was one year when I made a turkey dish on a holiday in red curry. I put green curry on roast beef at a family dinner last night - much better than gravy. Thanks for the tasty lens! And having been to Thailand twice, the people are wonderful too!

    I love Thai food and will be picking up some of the red curry paste this evening... my tastes have been diverted to rice and other grain alternatives due to my allergy of wheat. Asian cuisine seems to really satisfy my palette and have foods I can eat! Thank you for putting this lens together I enjoyed reading it, and have some great ideas now. Take care

    Wow! This looks really good! I am a sucker for Thai Food (well...Thai or anything blackened). I love the way curry smells--so delicious. The scallops sound really good too.

    Only thing is I'd have trouble letting it sit until the next day. Perhaps a double batch is in order!

    I prefer Thai curries over Indian any day and I love it to be HOT! So is that 8.5 or a 9 or 10.

    We go to a local Thai place from time to time. I prefer carry out because I like it hot. The only problem is their food is so hot that I end up sweating like crazy and would look funny if I did that in the restaurant.

    I love curry and Thai is one of my favorite. The way you make yours is a bit different that the way I do it, but I bet it is just as good. I use peanut oil, not olive oil. The red curry paste spices are sauted in the drippings of the sauted chicken to bring out the aromatic oils instead of last. If you want a more yellow color, you can add a bit of tumeric. Our family stays clear of artificial sweeteners, but you only need a couple pinches of sugar for a batch that feeds 4. I don't usually use veggies with red Thai curry, only with the green Thai curry. The only vegetable I use with the red curry is to garnish with cilantro. I also use a bit of Patis fish sauce. The brand of red curry paste I use is Maesri from Thailand that comes in a can. I will have to try your brand in the package and compare the flavors. Great lens! Put together well. I will lensroll it to my Hawaiian Style Portuguese Bean Soup lens.

    Not really, I did not try Thai's chicken red curry. What I did try was this green curry (no, everyone remain calm and don't scream). Most probably, it was made from vegetable and some chicken.

    I know what you mean about the spiciness. I cried and sobbed while eating it.

    But it was worth it (:

    Extremely inauthentic. taste of thai is garbage. Buy some real curry paste, like mae ploy. fish sauce is missing, fresh basil missing, palm sugar missing, and you added weird things like EQUAL?!?!?! also, minute rice?! yuck!!!!!!!!!!!!

    I love Red Curry Chicken and the hotter the better! You've got your recipe written in the right style - all the traditional recipes I've seen don't list ingredient amounts, rather suggesting just as you did that people adjust the quantities based on their on tastes.     Sounds delicious! And not too difficult or time-consuming to make either. I wonder...does the Taste of Thai Red Curry Paste contain MSG?
    That's the one possible monkeywrench in the skillet (for me, at least). Mighty tasty lens! Tasty for the eyes, too...as are all of your food lenses.

    Our favorite local Thai restaurant makes a great vegetarian red curry. I haven't made my own in ages. Luckily there is no shortage of wonderful Thai restaurants on Los Angeles. Each seems to have a unique style, so it never gets boring. Squid Angel Blessed!

    I've had Thai salad before and loved it, but I've never eaten at a Thai restaurant. I've always wanted to, but haven't got to it. My one experience with curry was a bad one. I tried Tandoori shrimp at a cafe in California and it wasn't too tasty. I was told later that's the most intense type of curry seasoning, so I should've started off more mild. This looks really good though. Happy belated birthday, Squid Angel blessed!

    I've never had Thai food at all, but I do so love curry. Not too hot though, I'm not into the ultra spicy stuff. My favorite time to use curry is on fried potatoes with cabbage, onion, and squash. I just love your cooking lenses, they give me some great ideas.

    My chicken curry is about 1 on a spiciness scale, but your recipe sounds totally awesome and I'm going to have to give it a try! I truly love the dancing chickens, which are definitely a 10 on the hot chicken scale! They'd make a great addition to my Chicken Dance lens, which I thank you for visiting and steering me this way! This lens is worth at least 5 stars and the chickens put it over the top, genuinely worthy of a SquidAngel blessing today!

    I lived in Malaysia and made trips to Thailand as much as we could. I can't eat hot curry, but my husband eats THAI hot, which is the real deal not American hot. I will have to try this recipe for him! 5*
