In this lens I want to share with you everything I know about redfish fishing and show you all the best redfish fishing techniques and tips. However, want to also explain what the redfish actually is for the beginners and do a short introduction to the topic.

First of all, let's introduce ourselves to the wonderful topic of redfish fishing. What is refish and where you can find them? Refish also known as the red drum, is a salt water fish which can be found along the coast of the southern USA. Redfish inhabit shallow bays and esturaries, targeting crustaceans and baitfish. You can recognize it by the black spot on their tails. They are highly prized as a recreational fish. People who are fishing these fish are called redfish anglers. They often compete in national tournaments that are similar to freshwater bass fishing events. There are redfish tournaments all over the gulf coast. I saw my first one on TV one Sunday morning and that was a first time I heard about redfish fishing.

Having spent 40 years avidly pursuing redfish fishing, I've concluded that they rank among the most adaptable creatures ever to inhabit salt, brackish or, at times, even fresh water.

I've caught them in depths ranging from mere inches to almost 150 feet, and on so many different artificial lures and natural baits that the largest tackle box on the market at present wouldn't hold a single member of each type.

Red drum or redfish can be caught in a myriad of ways. Probably the most widely utilized technique for catching red drum in Virginia is to anchor along a channel edge or shoal and bottom fish with cut peeler crab bait or other baits including, squid, cut spot, live spot and even chicken breast soaked in peeler crab oil.

In areas like Pocomoke and Tangier Sounds, anglers usually look for a somewhat sharp drop and anchor so that the boat lies on the slope of the channel. This depth is only a starting point and can vary greatly.

Many anglers prefer to fish a window of opportunity that includes the last 2 hours of the incoming current and the first 2 hours of the outgoing. If this coincides with dusk, the fishing is more likely to be good.

Other techniques for catching Virginia and Chesapeake Bay red drum include trolling large spoons in the lower bay areas.

Surf fishing is a popular way to catch Virginia red drum. Along the Atlantic beaches and around Virginia barrier islands, anglers use a fish finder or other rig and fish with baits such as whole spot, spot fillets or heads, mullet, bluefish fillets, crabs, shrimp or other baits.

How to Cook a Louisiana Redfish in Classic New Orleans Style

A classic New Orleans dish! Redfish, in a simple, delicious, almost creamy tomato style sauce! Simple and superb!!! For a thicker sauce, drain the stewed tomatoes, or cut back on the amount. Wonderful treat after long redfish fishing day.

INGREDIENTS:

* 1/2 cup olive oil
* 1/2 cup all-purpose flour
* 1/4 cup chopped onion
* 4 cloves garlic, chopped
* 1/2 cup chopped celery
* 3 (16 ounce) cans stewed tomatoes
* 1/4 teaspoon salt

* 1/4 teaspoon pepper
* 1/4 teaspoon dried thyme
* 1/4 teaspoon dried basil
* 1/4 teaspoon dried oregano
* 1 bay leaf
* 4 pounds red snapper fillets

DIRECTIONS:

1. Preheat the oven to 350 degrees F (175 degrees C). Mix together the olive oil and flour in a saucepan over medium heat to make a roux. Cook, stirring constantly, for about 15 minutes or until dark. This may take longer.

2. Add the onion, garlic, and celery to the roux, and cook until softened. Stir in stewed tomatoes, and season with salt, pepper, thyme, basil, oregano and bay leaf. Mix until well blended and heated through. Lay fish fillets in the bottom of a baking dish large enough to hold them in a single layer. Pour the sauce over the fish.

3. Bake uncovered for 30 minutes in the preheated oven, or until fish is easily pierced with a fork. While cooking, baste occasionally with the sauce. Remove bay leaf, and serve.
