Refried Beans, an Underappreciated Food

The lowly bean made lower by cooking it to mush is the fate of the refried bean but the refried bean hold greatness in that lump of uncelebrated protein. So come and discover the wonderfulness that can be found in a wellcooked bean.  Your mouth will say yum as it realizes the power of the BEAN.

Convenience in a Can 

Canned Refried Beans

Ok I admit you can make your own refried beans from scratch and very cheaply I might add but you can't beat the convenience of having already prepared refried beans in a can for your immediate use. They store well, can be stashed in your camping gear, don't take time to cook and you don't have to make a mess in a pot so easy cleanup. I only purchase fat free vegetarian refried bean, beans do not need lard or other oils to be tasty.

The following recipes can use any refried beans you want. They are quick, tasty, and meatfree.

Bean Burgers 

Beans of Comfort that Mom Made

This recipe is my mom's recipe for bean burgers they can make more burgers by adding more crackers to stretch your bean budget broader.

Ingredients:
Equivalent of can of refried bean
One long stack of saltines
3 Eggs
Salt, pepper, and garlic to taste
Chopped Onions(optional)

In a bowl plop the contents of one can of refried beans. Now crush the stack of saltines so no fragments are larger than forth of a square saltine. Add the crushed saltines to the beans. Crack the 3 eggs and add them too. Add onions if you want. Season to taste. Now mix/mush all this stuff together til well mixed. Spray a fry pan with some spray oil(I like canolia or olive) now plop some beans mixture into patty sized spoonfuls in the pan, flatten the spoonful a bit so it more resembles a rough patty. If ypur pan is big enough add more rough patties to cook more than one at a time. Turn the burner knob so that it is between medium heat and low heat. Cook one side of patty til is golden then flip. Cook other side til golden too. The resulting patty should be firm not falling apart or real mushy.

You can either serve on bread or bun like a burger or served smoothered in salsa or like my favorite dipped in a bit of ketchup.

Bean Wraps

These make a nice meal for car trips. They keep well in a cooler and you eat them cold. Prepare them the night before and keep in fridge.

Ingredients:
Soft Round Flour Tortillias
Refried Beans
Red Kidney Beans
Salsa
Shredded Cheese
Green Onions/Scallions

Take round tortillia and spread a thin layer of refried beans(right out of the can at room temperture) across the surface. Sprinkle a few red kidney beans here and there(not too many). Add shredded cheese(also a thin layer). Cut up scallions in small peices and sprinkle around too. Now spoon a lite line of salsa right in the center of the tortillia. Roll tortillia tightly so that the rolled diameter is no more than slightly larger than a U.S. quarter(if it is bigger or oozing it is likely you added too much stuff). Now tightly wrap each one in saran wrap and put in the fridge. Keep cold and eat cold. Very tasty and very filling. These also can be cut into medallions after sitting rolled over night in the fridge and used for appetizers.

Refried Bean Pizza 

So Yummy

This is a recipe adapted from one my sister shared with the family. She is not a vegetarian so hers was more of a taco pizza.

Ingredients:
Readymade Pizza Crust
Can of Refried Beans
Shredded Cheese
Green Onion/Scallions
Tomatoes
Lettuce
Salsa(optional)

Bake pizza crust according to directions. Spread refried beans around covering crust. Sprinkle shredded cheese on top of beans. Bake ate 350F degrees til cheese is melted and beans solidify and brown a bit. Take out of oven add tomatoes, lettuce, green onions/scallions, a touch more cheese and salsa if you want. Warning don't over eat it is good stuff.

Vegetarian Refried Beans 

From Scratch

Ok, ok, some of you guys want to know how to make your own refried beans(they freeze well BTW). Here are some recipes i found meandering around the web.
Vegan Refried Beans
A recipe using pinto beans but I think you could replace the bean with any bean you wanted, I like refried black beans.
Refried Beans
Another vegan recipe also using pinto beans. It calls for coconut oil...hmmmm...perhaps olive oil might could substitute if you don't have any or are concerned with heart healthy oils.

awesome I love refried beans! one of the few things I can still eat since going gluten-free. ^_^
but I can't stand them from a can. Much better to use the dried. YUMMMMMMMMMMMM...

Mmmmmm. Your bean wrap looks delicious. Sounds like a great Sunday lunch. Gotta go fix some! (Yes, I do like to make mine from scratch, in a cast iron bean pot. The best! Never overcooked, and delicious later when we refry in the cast-iron skillet with hot oil and grated cheddar on top.)
