Optimizing your banana experience
Starch in bananas turns to sugar during ripening.
The riper the banana, the sweeter the taste.
Bananas are normally stored at room temperature but storing in the refrigerator will slow the ripening process. The skin may darken but the fruit inside will be fresh.
To make them ripen more quickly, place bananas in a brown paper bag overnight, with an apple or tomato. They'll also ripen quickly in a plastic bag; it's the apple/tomato that brings the magic to the party, by emitting ethylene gas.
If tightly wrapped, peeled bananas can be frozen for up to 6 months.
To reduce browning in dishes featuring sliced bananas, add lemon juice.
Banana chips can be made by slicing, dipping in lemon juice and, assuming you don't have a dehydrater, laying them on a cookie sheet and warming in a 200 degree oven for 2-3 hours, flipping now and then. (P.S. 'Just found some dehydraters on Amazon and have added them below.)

Banana Cream Pie Recipe
Easy to make, even easier to eat!
Ingredients
2/3 C sugar
3 tbsp cornstarch
1/2 tsp salt
3 cups milk
3 egg yolks, slightly beaten
1 tbsp butter
1-1/2" tsp vanilla
9" ready-made pie shell
3 bananas
1/4 cup confectioners sugar
In saucepan, mix sugar, cornstarch & salt. Stir in milk gradually. Cook over medium heat, stirring continuously, until mixture thickens & boils. Boil 1 minute & remove from heat. Gradually stir in 1/2 of mixture from sauce pan with egg yolks, then blend that mixture back into saucepan. Boil 1 minute while stirring constantly. Remove from heat. Blend in butter & vanilla. Let mixture chill for 2 hours. Line pie shell with layer of sliced bananas, about 1/2" deep. Stir confectioners sugar into 2 cups whipped cream. Pour sauce pan mixture over bananas.
If you want to top it with whip cream, Cool Whip is fast and easy.

Making Banana Beer in Burundi Africa
You start by digging a hole, like a kind of home-made ripening gallery, big enough to pile up 5 or 6 bunches of bananas picked while still green. Make a fire from dried banana tree leaves inside the hole and line the hole with fresh banana tree leaves to stop the bunches from touching the earth. Place the bunches in the hole and cover them with more leaves and rhizomes (banana tree trunks) to hold the gallery up and keep it hidden.
4 to 6 days later, check the color of the bananas which should be yellow, hence ripened. Peel the bananas and place them inside a hollowed canoe-shaped tree trunk. Then knead and churn them with bundles of certain very stiff grasses (called ishinge, or needles) in order to extract the juice. The first banana juice, called umutobé, can be served to women and children. You should be able to fill three to four 10 litre jugs of it.
To obtain fermentation, sprinkle each jug with ground grilled sorghum that acts as yeast. Then seal the jugs using banana leaves and leave them to stand near the hearth where a small fire is kept burning for a day and a half. Then decant the beer into medium sized jugs and leave it to stand for a whole day in a cool place.
Banana juice watered down with equal proportions of water is called urwawa beer. You can dilute the first juice as much as you like, according to your taste. Honey can also be added to pure fermented banana juice to make isongo mead."
