Pepes Jamur
If you are looking for vegetarian dish, pepes jamur is a must try. It's spicy, full of protein, flavorful and smoky. Indonesian love jamur merang (straw mushroom or paddy straw mushroom). It's easy to get, delicious and cheap source of protein. Fresh grated coconut add some creamy and nutty flavor, but mostly I love the kemangi (lime basil), kaffir lime leaves and bay leaves to infuse my pepes with sweet citrus aroma. After steaming into perfection, I grill them on the grill to get some smoky flavor.

Resep pepes jamur

Ingredients
- 8 oz fresh straw mushroom
- 2 cloves garlic
- 3 red chilies
- 1 cup fresh grated coconut
- 2 spring onion
- 3-4 daun salam
- a bunch of lime basil
- 1 tsp salt
- 1/2 onion
- 4 kaffir lime leaves
Instructions
Peel the garlic. Wash the red chilies and garlic then mince them into a coarse paste. Set aside.
Wash the spring onion and slice it finely. Set aside.
Slice the onion finely and set aside.
In a mixing bowl, put garlic, red chilies, grated coconut, salt, spring onion, onion, bay leaves, kaffir lime leaves and lime basil leaves.
To get rid of the dirt, with damp cloth. Cut them into 1/4-inch thick slices. Add the mushroom into mixing bowl. Stir and toss them to combine with spices.
Lay some clean banana leaves on work surface. Then divide the tossed mushroom into 4 and put them into the center of the banana leaves. Fold the leaves over the mushroom and it into a pocket.
Steam the banana leaves pockets about 20-30 minutes or until it's done. Then grill it on the charcoal grill to get some smoky flavor.
Serve it with warm steamed Jasmine rice and some hot fiery sambal

Tips
If you can't get banana leaves, use aluminum foil. Instead of steaming, bake it for about 30 minutes.
Daun salam (Indian bay leaves) give a unique sweet flavor. Replace it with regular bay leaves if its not available.
Use variety of ingredients or spices for your pepes such as egg, shrimp paste, and other protein sources: meat, especially seafood.
