How to fix curry chicken

Ingredients
- 4 lb chicken legs (bone-in)
- 8 cardamom pods
- 6 whole cloves
- 2 cinnamon sticks (2-inch each)
- 2 whole star anise
- 1 tbsp cumin seeds
- 2 tbsp fennel seeds
- 4 tbsp ground coriander
- 2 tbsp chili powder
- 3 cloves of garlic
- 3 onion
- 3 inch fresh ginger
- 1 lbs potatoe
- 1/4 cup vegetable oil
- 2 tsp salt or to taste
- 1 cup coconut milk
- 1 tsp turmeric power
- 1 sprig curry leaves
Instructions
Use spice grinder to grind cardamon pods, cloves, star anise, fennel, cumin, cinnamon into a fine powder. Turn into a bowl then add ground coriander, turmeric powder, chili powder and about 6-8 tbsp water. Mix and stir it into thick paste. Set aside.
Peel and slice onion into fine slices. Set aside.
Coarsely chop the ginger, remaining 2 onion, and garlic. Put all of these ingredients into food processor and pulse it into smooth paste.
Peel, wash and cut potatoes into 1 inch cubes. Put them in a bowl of water.
Heat vegetable oil in a large wok over medium-high heat. Then add the onion slices, fry and stirring it until golden brown. Add the kari paste and ginger, garlic, onion paste . Stir and fry the pastes for about 10 minutes or until they are dark in color and fragrant.
Add 3 cup of water, chicken, curry leaves and the potato cubes (drained). Bring it to simmer. Cover and cook in low heat about 30 minutes or until the chicken is cooked through and tender. Then add 1 cup of coconut milk and salt. Cook and bring it to gentle boil. The curry chicken is ready.
