My meeting with an antique coffee mill - and why i am considering only the retro coffee mills.
When i did become an addicted coffee drinker, i simply used the vacuum-packed grounded coffee and the filter, i did not have even a coffee grinder.I accept that this is an insult for the whole coffee concept, and what better way to make up for my own tasteless behaviour toward the coffee world, but to find out about those recipes and methods, trying to get people to discover the real coffee-taste. The retro coffee mills would be a first step to the gourmet coffee.

What gives the taste of the coffee?
there are few demands which have to be respected for having a good coffee:1.Use good quality coffee, proper blend,freshly roasted and freshly ground
2.Use fresh, clean, cold water. Filtered or bottled water works well, but avoid distilled or softened water.
3.The grind chosen must be of the correct fineness for the chosen brewing method.
4.The pot must be cleaned and warm.
5.Make only enough coffee for your immediate needs. The coffee will deteriorate if you keep it too long. Avoid reheating coffee, it just doesn't taste the same.
6.Avoid boiling brewed coffee .
7.Use approximately 70 grams of coffee per litre of water.
So a good coffee needs a lot of care, work, and tools. Let's take it step by step.
Roasting, blending and grinding the coffee beans.
As i said, my granny used to roast the green coffee beans on her cooker, in a pan, using a wood spoon to stir in quite often. She used to roast the beans until they got a deep brown colour, and finally she always did throw a splash of cogniac on the beans.I did the same, it was difficult only to get the green beens, sorts of Costa Rica and Colombian arabica coffees, and in the end i had the dark brown oily coffee.
The more difficult task was to grind it very well, as the turkish coffee recipe is asking for it.
And here the retro coffee mills are the one to help me to get there, with the setting for the most fine grinding. Probably a real antique grinder would do even better but this retro type got me quite satisfied.

The roast coffee is the best 2 days after roasting till about 3 weeks after.

If you want my Ganny's recipe for blending your coffee beans, take 50% of Columbian medium roast coffee beans and 50% of Costa Rica medium roast coffee beans. You will not be disappointed.

Retro coffee mills
Most people are probably familiar with those blender-like grinders with the whirling blades. You know, the ones that makes the loud buzzing and crunching sounds. Then there are the more sophisticated machines that use a burr grinder. These consists of a mechanism that pushes the whole beans between two moving grinding surfaces at a given (and usually adjustable) distance apart. The beans are crushed all at once to the same size particles, instead of being chopped repeatedly into smaller and smaller bits, like in the mini-blender style grinder. These devices range from expensive electric models that have sophisticated controls for grind size to the traditional (and far less noisy) hand grinders you see in antique stores for around $120 or far less expensive, good hand grinder manufactured nowadays, like Zassenhaus or Peugeot.

Why using retro coffee mills?
As i told, grinding at home the coffee beans is an important step for brewing a good cofee. The aromathique oils of the coffee beans are what we need to keep in our coffee and the home grinding will keep them at least 50% of it. If we use medium roasted coffee beans, the oil is still in the texture of the beans and grinding at home we have them for our gourmet coffee.
The method is important too, the eletrical grinders will chop the beans from big pieces to small, loosing oil every time. But the retro manual coffee mills will grind the beans at once and they will loose less oil. If you will brew at the whole ground, you did your best.
Retro cofee mills will let you to have different finess of the particles, and you need this according to the different brewing method used.

obviously, there are strong opinions about other 2 ways (at least|) making turkish coffee, not to mention the several other ways of making coffee in Middle East.They are delicious and real coffee lover will discover them online. But to start this is a good one.

Antique coffee mills
Antique coffee mills are collection pieces, looking very well in our kitchen. Not always are used, not always are good for a proper grinding. But if you want a real coffee mill, you will find them in specialized shops, and you can find a good working one. Look at them, they are the original ones, making you proud of being a coffee lover(don't be bothered by few antique clocks). Do you like the freshly grinded coffee?

- now the automatic espresso machines are using the same grinder and the freshly grinded coffee, they are all right, who likes espresso.

- My grandmother always used one of these mills, it brings back sweet memories. I very much prefer freshly roasted and ground coffee, the taste is superb!

- 50/50 Columbian and Costa Rican thanks for the tip! I remember seeing coffee grinders in all the old folks kitchens growing up and was always fascinated by them and what fun when I was allowed to do some of the grinding. Very nicely done!
