It all started in August of 1970 with a simple bean-cooker: a glazed brown crock liner, white steel housing and aluminum lid. What the Crock-Pot® brand did first was expand the cookbook to offer a real practical variety of dishes for the bean-cooker. Crock pot recipes are always a hit. This white chicken chili recipe is a great way to prepare chicken in a crock pot. It's also super for tailgating or a potluck.

Following are the ingredients you will need to prepare this crock pot recipe. We are using a Rival crock pot, but any brand will do. To make a crock pot beef or pork crock pot recipe, just substitute those meats (cooked and shredded) for chicken in this recipe.

Chicken Chile Verde - Crock Pot Recipes

2 (9.75 ounce) cans shredded chicken
1 1/2 cups fresh or frozen corn
2 (28 oz.) cans green enchilada sauce
1 (15 oz.) can Northern white beans
4 finely chopped garlic cloves
1 small onion, finely chopped
7 ounces Embasa brand salsa verde
7 ounces diced green chiles
1 handful fresh cilantro leaves, washed and chopped

Chef Tip: Soak cilantro in a bowl of water first to remove dirt and sediment.

Preheat a pan with 2 tablespoons oil. Next add and saute onion, cilantro and garlic about 2 minutes. Add chicken and mix well. Cook another minute.

Coat Crock Pot with cooking spray. Add the rest of the ingredients to the crock pot, including the chicken mixture. Stir well. Set on high and cook about four hours.

Soften tortillas on cooktop and fill with chile verde mixture. Top with sour cream, shredded cheese and homemade salsa.

Rival 5025WG 2-1/2-Quart Crockpot

I have this Crock Pot but my crock insert is white instead of black. I bought this slow cooker probably in the late 1990s. I own three slow cookers (the Rival 3-1/2-quart oval and the Rival 6-quart), and this is the best one and the one I use the most. It is 2-1/2 quarts and is perfect for two people. It cooks the best out of all three of my slow cookers as it does not overcook the food as the other two will. I find that the cooking times listed in most slow cooker cookbooks are very accurate for this Crock Pot, but for my other two larger models, I must reduce the cooking time. I have never had overcooked food in this slow cooker. Everything has always cooked to perfection. Most recipes in slow cooker cookbooks are written for 6 to 8 servings. If I cut the recipes in half, they will fit perfectly in this Crock Pot and fill it 3/4 full. That is just enough food for my husband and me and will usually leave leftovers for one or two more meals for one person. This slow cooker also looks very nice as it is all white and matches my kitchen, so it is always out on the counter. I use it many times a week and I am very happy with it. Since it cooks at such a low temperature, whenever I cook meat, I use the high setting for the first hour and then reduce it to low and cook for one hour less than the stated recipe (since one hour on high is equal to two hours on low). Everything turns out perfectly this way. The potatoes and carrots are perfectly tender and have not cooked down to mush as has happened in my larger, more powerful Crock Pots.

What can be easier than selecting high or low?

Many new cooks are reluctant to try a slow cooker or crock pot. The truth is, there is really nothing easier to cook with than a crock pot. For most manual models there are only two temperature settings, low and high. The temperature is set based on how long you want to cook the food. Rival crock pots are a handy way to make a complete, one-dish meal for your family if you are a stay at home mom or if you work outside the home. You set it and forget it.

Bachelors can also cook themselves a decent meal without too much effort. Many of the Rival Slow Cookers come with automatic settings that allow you to program them to start cooking and stop cooking at certain times. This makes Rival programmable slow cookers very convenient to use.

Your Rival Slow Cooker has a removable stoneware dish. This will make clean up easy after you have cooked your meal. You can also use the stoneware to marinate your meat overnight in the refrigerator before you cook the next day. You can even use the removable dish as a serving dish when you are setting your table. To make a stew with your Rival Slow Cooker, you first add the beef, ham or chicken, and let it cook for about two hours on the high setting. The meat will be nearly cooked through by that time. If necessary you can add more water or broth to raise the liquid level to about 2/3 the way up the side of the pot.

After you have finished using your Rival Slow Cooker, you will want to make sure you clean it well. Keep in mind that the heating unit should never be submerged in water as this can damage the entire unit or it could cause electrocution the next time you are going to use it.

Wipe the heating unit down with a sponge of hot water and dish detergent and then you want to make sure you dry it thoroughly. Make sure you keep the chord free from knots and wrap it up loosely with a rubber band to keep it from kinking as this can affect the performance of your Rival Slow Cooker as well.

Adapting Your Favorite Recipes for a Rival Slow Cooker

Adapt a favorite recipe, or double or triple the amount

Many of your favorite recipes can be successfully adapted to the Rival Slow Cooker if you follow a few simple rules. You'll find a basic time/temperature guide for converting recipes, some do's and don'ts for specific ingredients and a few tips for making your slow cooker dishes more flavorful.

Liquids
Generally, liquids may be decreased in slow cooking - a general rule of thumb is about half the recommended amount. Unless the dish contains rice or pasta, one cup of liquid is usually enough.

Pasta and Rice
When recipes call for cooked pasta to be added, cook it until just slightly tender before adding to the pot. Add 1/4 extra liquid per 1/4 cup uncooked rice, and use long grain converted rice for the best results. For long-cooking recipes, add cooked rice shortly before serving.

Beans
It is usually best to soak beans overnight before cooking them in the crockpot. Before adding sugar or acidic ingredients, the beans should be softened first, either in the slow cooker or on the stove top. If your recipe includes tomatoes, salt, or other acidic ingredients, the beans should be tender before beginning.

Herbs and Spices
Ground herbs and spices tend to dissipate over long cooking times, so it's best to add them near the end of cooking. Whole herbs release flavors over time, so are a good choice for crockpot cooking. You should taste and adjust seasonings, if necessary, before serving.

Milk/Cheese
Milk, sour cream, and cream break down over long periods of cooking, and should be added during the last hour. Condensed cream soups are good substitutions for milk and can be cooked for extended times. "Healthy," or reduced fat cream soups can be used in any recipe as a substitute. Cheeses don't generally hold up over extended periods of cooking, so should be added near the end of cooking, or use processed cheeses and spreads.

Soups
Add water only to cover ingredients in soup, and add more after cooking if necessary for a thinner soup. For milk based soups, add 1 or 2 cups of water during the last hour. Stir in milk, evaporated milk, or cream as called for.

Vegetables
Dense vegetables like potatoes, carrots, and other root vegetables should be cut no larger than 1" thick, and placed in the bottom of the pot, since they take longer to cook.

Doubling or Tripling a Favorite Recipe

Beef or Pork
When preparing dishes with beef or pork in a larger unit, browning the meat in a skillet before adding to the slow cooker yields the best results; the meat will cook more evenly. Roasted meats, chicken, and turkey quantities may be doubled or tripled, and seasonings adjusted by half. Caution: Flavorful spices such as garlic and chili powder will intensify during long slow cooking. Add just 25 to 65 percent more spices as needed to balance the flavors.

Soup or Stew
You may double all ingredients except liquids, seasonings, and dried herbs. Increase liquid volume by half, or as needed. The slow cooker lid collects steam, which condenses to keep foods moist and maintain liquid volume. Do not double thickeners, such as cornstarch, at the beginning. You may always add more thickener later if needed.

Baked Goods or Cheesecake
When preparing baked goods or cheesecakes, it is best to simply prepare the original recipe as many times as needed to serve the number of people you want.
