My All Time Favourite Autumn Recipe - Roasted Chestnuts
Autumn or fall as the Americans say is near in the Northern hemisphere, which means my birthday is coming up and best of all CHESTNUTS - my all time favourite veggie. When I lived in Denmark is was tough luck - lots of horse chestnut trees there, it is simply too cold for edible chestnut trees to grow there.
So I had to wait for the imported from France, unfortunately they always arrived 2 weeks time after my birthday, so I have never been able to combine my birthday dinner and chestnuts.
Never the less roasted chestnuts with a glass of fine red wine is not to miss!.

Roasted Chestnuts Recipe
Prep Time: 5 minutesCook Time: 30 minutes
Ingredients:
* 1/2 pound / 250 grams chestnuts
Preparation:
Preheat oven to 425 F/ 220 C
Find the flat side of each chestnut and cut a large X with a sharp paring knife all the way through the skin.
Place chestnuts on a shallow baking pan (or a chestnut roaster, see below) and place in the oven to roast for about 30 to 40 minutes, depending on size of nuts. Shake pan several times to rotate chestnuts so they will cook evenly.
If you just want them cooked enough to peel, roast for 10 to 15 minutes.
Peel roasted chestnuts as soon as they are cool enough to handle. Once they cool completely, they are difficult to peel. However, they may be reheated briefly to aid in peeling.
Chestnuts may also be roasted on the outdoor grill. Watch carefully and turn them often.
Another favorite method for small amounts is stove top, particularly on a gas stove. Place on top of a flame-tamer and cover with a deep lid. Roast over low heat until done, about 10 minutes, turning often to cook evenly.

and the No.1 reason why you want a chestnut roaster it that it keeps the chestnuts moist and still enables you to get the flavor of roasting instead of boiling.
Which Wine to Drink with Roasted Chestnuts?
I recommend a light wine such as the Italian Vino Novello (translates: New wine)Read more about this wine at WineCountry Italy. These wines are available both in the US and (obviously) in Europe. Just ask your local wineshop - or visit your local vinyard depending where in the world you are.
If you don't drink alcohol I will suggest you drink chilled water with the chestnuts.
