Chicken--The Only Way To Fly

OK, who doesn't love chicken? Well, except Vegetarians, of course, and you are politely excused and we completely understand and admire your commitment to meat abstinence. For most of the rest of us of the meat eating persuasion, chicken should be, and usually is, a staple of our diets.

Because chicken is a staple of most diets, no good cook can ever be without a good recipe for roasting chicken. It is one of the most popular and one of the simplest of chicken dishes. Maybe it is so popular because it can be paired with almost any side for a nutritious and delicious meal that tastes as if you spent the whole afternoon in the kitchen even though you didn't.

From mashed potatoes and green peas to rice and gravy and brussel sprouts, everything goes well with roasted chicken. One of our favorites is a side of cranberry sauce accompanied by baked sweet potatoes and green beans.

No matter what your favorite accompaniment is, I hope that you'll enjoy preparing and sharing this recipe with your family and friends.

First Choose Nothing But The Best Ingredients 

I choose to use free range, organic chicken that is antibiotic, hormone, and additive free whenever it is available. I grew up on a farm with fresh, organically farm-raised chicken and eggs, and I can tell you that I personally found a difference in the taste and quality. I have noticed an increase in the availability in some areas which must mean the larger processors are beginning to offer certified, free range, organic meat. That is good news for those of us who prefer it.

I also use locally grown, organic, fresh fruits and vegetables whenever possible. I also grew up with fresh fruits and vegetables, although I am sad to say that most were not pesticide free which was unheard of in the South at that time.

It is still difficult today in my state to obtain organically grown vegetables and fruits that are grown locally. Most are shipped in from elsewhere, and as far as I've been able to tell, available mostly at the big chains. As of the writing of this lens, I was able to locate five organic growers, three of which are certified, in my state. However, only two of those refer to growing anything other than organic fruit.

I buy organic whenever possible and buy from local farmer's markets whenever possible. I believe that the fruits and vegetables are healthier and fresher. It also helps support the economy of local communities, and I believe helps to protect the environment by cutting down on required food shipments.

Ingredients For Roasted Chicken 

1 Whole Chicken (skinned)
2 Stalks Celery
1 Apple (any variety but I usually use Gala or Red Delicious)
1 Onion
1 Teaspoon Poultry Seasoning
1 Teaspoon Sea Salt
1 Teaspoon Black Pepper
2 Cloves Garlic Minced
1 Can Chicken Broth

Preparation Instructions for Roasting Chicken or Turkey 

Preheat oven to 325 degrees Fahrenheit. Skin and thoroughly wash whole chicken. Place chicken legs up in the dutch oven.

Wash all vegetables and fruit. Slice apple and onion into quarters. Stuff chicken with one quarter of the apple and one quarter of the onion. Place other 3 quarters of the apple and the onion on or around the chicken. Peel and mince 2 garlic cloves. Place one minced clove inside chicken. Sprinkle the other on top of the chicken . Sprinkle one teaspoon each of poultry seasoning, sea salt, and black pepper onto the chicken. Pour one can of chicken broth into pan. Place lid on the dutch oven and roast chicken in oven for approximately 2 ½-3 hours (depending on the weight [usually 3-5 pounds] of the chicken).

I also use this recipe for roasting turkey, doubling all ingredients except the chicken or turkey, of course. Cook according to instructions provided by the meat processor (usually 15 minutes per pound).
