Iranian Sevruga 000 Caviar Malossol

Due to environmental pollution and poachers the Sturgeon is on the verge of extinction. They can grow to 3000 lbs or more, but they are now lucky to grow to more than 60 lbs. The wild Beluga, Ostera, and Sterlet Sturgeons are endangered and you will rarely see them on the market, except from Aqua Farms.
Many of the finest restraunts and the wealthy will pick up the caviar from these three sturgeon when they become available.
The caviar from the Sevruga Sturgeon is the caviar that you will be the luckiest to pick up on the gourmet food market. It is a little saltier than the other three caviars, because it soaked in the brine, and the eggs are a little smaller.
What does malossol means that the eggs are so incredibly good that they need very little salt to process them.

I had bought the 32 oz and this was the creamiest and smoothest caviar I've ever tried. Even better than the Russian caviar -even though they come from the same sea. It must be the Iranian touch, or the extra prayers they put into their products. :)
I tried the Sevruga many years ago when I went to cooking school. This hooked me on caviar. While I have only had sturgeon caviar a couple of times since then, I love it.

Ok, let's talk about Salmon caviar. My father would often take the roe from the salmon he caught and use half of it to prepare for bait and use the other half to create his own caviar. We ate this often, and enjoyed it on slices of my mother's homemade bread. It was a great snack. My father would also smoke it, which was my favorite.
