In 2002, Ig (Ignazio "Ig" Vella, affectionately known as the Godfather of artisan cheese) hand selected Cary Bryant and David Gremmels as the new owners of what is now known as The Rogue Creamery. Of utmost importance was to carry on the tradition of hand-milled cheese. Bryant and Gremmels hit the ground running. Within a year, they were producing award-winning cheeses including the brand new Chocolate Stout Cheddar produced in a partnership with Rogue Brewery.
When the Rogue Creamer joined forces with another famous set of Rogues (those over at the Rogue Brewery) it resulted in the creation of a delicious cheddar cheese combined with Rogue's famous Chocolate Stout.
After the cheddar is formed, it is broken down and covered in Rogue's Chocolate Stout. This stout tastes wonderful with the cheddar. The mellow flavor of oats, chocolate malts, and real chocolate are balanced perfectly with the right amount of hops for a bittersweet finish. The darkness of the beer also gives the cheese this distinct lacy pattern. All you need is a stout of your own!
