They have been treasured by perfumers for centuries, their pleasing fragrance
adding that perfect touch to many of their wonderful creations. Aromatherapists have depended on them for medicinal purposes. Both men and women have enjoyed giving and receiving them as symbols or tokens of affection. Roses symbolize love worldwide. They represent romance, their beauty and elegance lending themselves perfectly to romantic gestures. All these wonderful qualities of the rose their heavenly scent, gorgeous colors, and suggestion of romance lend themselves well to another, less well known use. Rose petal jam. Subtle in taste yet pleasingly fragrant truly a delight. All those qualities we love about the rose blend well and make as delicious a treat for the taste buds as they do the nose.

The rose has a few pleasant surprises for us.

One of the pleasant surprises it has for us is that it's edible. It's as delicious as it is fragrant and can be made into jams, marmalade, and syrups that can add a unique touch to many dishes and occasions. You can whip up an especially romantic breakfast for that special someone, make an elegant brunch,an afternoon tea, or make a dessert. Rose petal jam, or syrup will add that extra special something that can turn the ordinary into the extraordinary. The jams, and marmalade go well with buttered croissants, muffins, scones, and toasts. The syrups can be used on pancakes and french toast, or poured onto ice cream sprinkled with a rose petal or two.
Another surprise it has for us is that it's very rich in vitamin C. Rose petals are richer in vitamin C than oranges are. They are also a good source of iron, vitamin A, and calcium.

Rose petal jam recipe

A very basic easy to make recipe to start off with even if you've never made a jam before

You can use roses right from your garden. The more fragrant the better. Red roses are preferable. Pink can be nice and so can most other color variations . I avoid using white .
When making any rose petal jam marmalade or syrup, you must snip off the white part at the bottom of the petals. If you don't it will have a bitter taste. If you use white rose petals that can be difficult to do. You can try to guess of course or simply cut the bottom half of the rose off. I prefer playing it safe though and stick with the colored ones.

Ingredients

2 cups of rose petals
2 1/2 cups of water
3 1/2 cups of sugar
1 lemon (or 1/4 cup lemon juice)
1 teaspoon vanilla extract
1 package of pectin

Preparation

Take your roses and snip off the white part at the bottom of the petals.
You can just grasp the rose from the top and snip the bottom. No need
to do it petal by petal.
Wash them thoroughly.
Place in a pot ( I like using a glass pot for this) along with the water, the sugar,
the lemon juice, and the vanilla extract.
Bring to a boil, then reduce heat and let simmer for about 35 minutes.
Take the pectin and dissolve into about 1/2 a cup pf water and mix thoroughly.
Take dissolved pectin and pour in the simmering mixture stirring briskly.
Remove from heat. Let cool. Then put in jars. Can be kept in the fridge.

If you prefer you can put the water, rose petals and sugar in a blender or food processor before cooking. This way you don't have whole petals in your jam when it's done. The petals if not put through the blender can be nice and add texture so it's not necessary.
