Saint Patricks Day History, Customs, and Traditions

"St. Patrick's Day" was first celebrated in America in the city of Boston in 1737. Saint Patrick, born in Wales in AD385, was the patron saint of Ireland, although prior to his sainthood he was considered a pagan. At the age of 16 a group of Irish "gangsters" raided his village, kidnapped him and sold him into slavery. It was during this time that Saint Patrick became close to God, and when he escaped from slavery 6 years later he desired only to return to Ireland to convert other pagans into Chritianity. However, his wishes were deferred when his superiors appointed instead St. Palladius to become the bishop of Ireland. Two years later St. Palladius was transferred to Scotland and Patrick was appointed the bishop to Ireland to replace St. Palladius. In order to accomplish his mission of converting the Irish country to Chritianity, Patrick traveled throughout Ireland and began establishing churches, schools and monasteries. He continued as bishop of Ireland for 30 years, after which he retired. He died on March 17 in AD461, and that day has been celebrated as St. Patrick's Day ever since.

Today people of all nationalties celebrate Saint Patrick's day by wearing the green, drinking beer and hosting a St Patrick's Day parade and parties.

THE HISTORY OF CORNED BEEF AND CABBAGE.... 

The Irish Myth

Before I share with you some of my favorite Irish recipes, I thought you might like to learn a little bit about how Corned Beef and Cabbage came to be a Saint Patrick's Day favorite food.

According to Bridgett Haggerty of Irish Cultres and Customs, corned beef and cabbage was traditionally served in rural Ireland for Easter Sunday (not St Patrick's Day). And even then, it was most likely a piece of "bacon joint" or salted pork boiled with cabbage and potatoes, not beef. Cattle were a precious commodity to the Irish and used more for their milk than for their meat. The size of one's herd was an indicationn of wealth, status and power and therefore cattle were not slaughtered for their meat. Even when corned beef was served in Ireland it was a delicacy and much too expensive because of the salt, so when beef was consumed it was eaten fresh, not brined or salted.

When the Irish emigrated to America, they found that both beef and salt were much cheaper. They treated beef in America much the same way they would have pork or a bacon join in Ireland. They "corned" it. Pellets of salt, some the size of kernels of "corn", were rubbed into the beef to keep it from spoiling. It was then soaked to draw off the excess salt, then braised or boiled with cabbage and potatoes. The dish became known to American's of Irish descent as the traditional favorite to serve on Saint Patrick's Day. Today this peasant dish is more popular in the United States than in Ireland.

IRISH RECIPES 

CORNED BEEF AND CABBAGE

Preparation Time: 10 Minutes
Cooking Time: 2 Hours 40 minutes (for 3 lbs)
3 1/2 Hours (for 4 lbs)

3-4 lb. corned beef brisket (with spice packet that
comes with the corned beef)
10 small red potatoes (can substitute any other kind
of potatoes but if you use a larger
potato you'll need to halve or
quarter it depending on the size)
5 carrots, pealed and diced or julienned
1 large head cabbage, cut into smaller wedges (1/4)
1 onion, pealed and cut into quarters
2 small turnips, chopped (optional)
1 Can Beer (optional)
3 cloves minced garlic
10 whole black peppercorns

Horseradish sauce: 1/4 cup prepared horseradish, 1 TBS. dried chives, 3/4 cups sour cream, juice of 1/2 lemon. Mix all together and refrigerate which corned beef is cooking.

Rinse corned beef (if desired) and trim excess fat (leave some fat on meat because this makes it juicier). Put the corned beef in a large pot or Dutch oven. Add the spice package that came with the corned beef and fill with enough water (and the can of beer if using) to cover the corned beef. Add the minced garlic and the black peppercorns. Cook for approximately 1 hour 40 minutes for 3 lbs. and 2 hours 30 minutes for 4 lbs. Add the potatoes, carrots and turnips. Cook for an additional 40-50 minutes. Add the wedged cabbage and onions and cook for another 20-25 minutes. Serve with the horseradish sauce.

IRISH STEW (The Traditional Way)

3 lbs. bonless lamb shoulder (cut into 1 inch cubes
with most of fat trimmed)
3 lbs. boiling potatoes (such as red potatoes, yukon
gold...peel and cut into quarters)
1 lb. carrots (peeled and cut into 1/2 inch pieces)
6 stalks celery (cut into 1/2 inch pieces)
1 large onion (diced finely)
1 1/2 TBS. Fresh Parsley (minced)
1 Tsp. dried thyme
6 cups chicken broth (either canned or homemade)
6 TBS. flour (all purpose)
1/4 cup vegetable oil

In a large pot or dutch oven place the lamb, parsley and thyme. Add salt and pepper to taste and cover with 4 cups of the chicken broth. Cover, bring to a boil and simmer for 1 1/2 hours. After 1 1/2 hours add the potatoes, onion, carrots and celerated along with the additional 2 cups of chicken broth. Cover again and simmer for an additional hour.

In a small bowl mix together the oil and the flour until smooth. Stir this into the simmering stew and mix until well incorporated. Simmer uncovered for an additional 3-5 minutes. Season with salt and pepper to taste.

AND AN IRISH DRINK TO TOP IT OFF.... 

IRISH COFFEE

After a hearty meal of Irish Food, there's nothing better than a good ole' cup of Irish Coffee

1 jigger of Irish Cream Liquer (1.5 oz)
1 jigger of Irish Whiskey (1.5 oz.)
hot coffee
whipped cream
nutmeg (fresh ground is preferable but you can use
the canned nutmeg)

In your favorite Irish coffee mug mix the Irish Cream Liquer and the Irish Whiskey. Fill the mug with coffee and top with whipped cream. Sprinkle on the nutmeg and enjoy...........
