Tuna or Salmon Cakes Recipes
I'm no great fan of corn fritters, and I can never get my potato cakes to hold together, but tuna cakes I can do. And, my husband loves them.
They're so easy to make that it would be silly not to, especially since they're a great way to get fish into your diet. I make them with canned tuna or canned salmon, but I suspect any fish will work well if prepared right.
The Ingredients
1 egg
6 saltine crackers- crushed (or 4 for optional directions)
ground black pepper to taste
(optional) 2 tablespoons of cooked bulgur wheat
The Directions
Lightly grease frying pan with butter, margerine, olive oil, or non-stick spray.
Divide into 4 or 5 patties, and fry gently, turning once.
The Optional Directions
Bulgur wheat is highly nutritious, yet virtually undetectable in this recipe. Add a little to the tuna cakes, or many other recipes for a nutritional punch without aggravating your eaters.

Tuna & Salmon Cakes Recipes Tips
>>Wild salmon is healthier than farmed salmon as wild salmon contains higher amounts of healthy Omega 3s and farmed salmon is higher in Omega 6.
>>Pregnant women need two to three servings of fish per week, but should limit their intake of tuna due to high amounts of mercury in some types of tuna.
>>Fresh tuna is a great source of Omega 3s, but canned tuna is not.

- Glad to help! I love this recipe because it's so adaptable. I've made it with Boston Blue and Orange Roughy, and also with flounder and crab mixed together. With those lighter flavors, I add parsley and Old Bay, though.

- You're welcome! And please let me know how it turns out. I've been curious to try it with fresh fish instead of canned, but husband tends to not leave leftovers for experimenting with. :-)
