Tuna or Salmon Cakes Recipes
When I was growing up, both of my parents made tuna cakes, potato cakes, and corn fritters on a regular basis. Dad's were always best, but don't tell mom I said that.
I'm no great fan of corn fritters, and I can never get my potato cakes to hold together, but tuna cakes I can do. And, my husband loves them.
They're so easy to make that it would be silly not to, especially since they're a great way to get fish into your diet. I make them with canned tuna or canned salmon, but I suspect any fish will work well if prepared right.

The Ingredients
1 egg
6 saltine crackers- crushed (or 4 for optional directions)
ground black pepper to taste
(optional) 2 tablespoons of cooked bulgur wheat
The Directions
Lightly grease frying pan with butter, margerine, olive oil, or non-stick spray.
Divide into 4 or 5 patties, and fry gently, turning once.
The Optional Directions
Bulgur wheat is highly nutritious, yet virtually undetectable in this recipe. Add a little to the tuna cakes, or many other recipes for a nutritional punch without aggravating your eaters.

- Double the recipe, use 12 tablespoons italin bread crumbs instead of crackers or bulgur wheat, use 1/2 cup of egg whites instead of 2 eggs (for the doubled recipe, for the regular add 1/4 cup egg whites, add a Dash of skim milk, a dash of soy sauce, and bake at 350 degrees for 15-20 minutes depending on if u like the tuna cakes warmed or crispy, and sprinkle some parsley on as soon as they come out of the oven. Serving suggestion: serve onto of white rice with soy sauce.

- Just the other week, I made crab cakes with remoulade sauce and I really love it. I want to give tuna cakes a try this time. I've never made tuna cakes with bulgur wheat. This would be my first.

Is This A Healthy Recipe?
Well, that really depends on your point of view. Tuna and salmon are both healthy fish, both are a low cal alternative to meats like steak or pork but are still "meaty" enough to satisfy most carnivores. Adding diced onion or shredded carrot (or both) to the mix will boost the nutritional value of the tuna cakes, as will my suggestion of adding bulgar wheat. However, the crackers are carb heavy without adding any nutritional value, and the eggs are debatable (my research shows that eggs are very healthy, but others may argue). So, yes, I consider this to be a healthy entree or even snack, but I wouldn't recommend that someone use it when trying the 3 day tuna diet or similar.
