Salsa Chicken Meatloaf Recipe
One of Americas most well known comfort foods is the delicious meatloaf. This is a main entree that is well known among every American. Granted there are undoubtedly hundreds, if not more recipes for meatloaf.
Yet none that are as healthy for your family or as full of flavor as this
This recipe which combines ground chicken and ground pork is far less greasy than other meatloaf recipes. It is very lean and the various spices and sauces create a delicious, slightly spicy-hot flavor.
It is a meatloaf recipe that will no doubt be one that you include in your recipe file because of the flavor infusion of fiery jalapeƱo, barbeque sauce, and salsa. These flavors combined with the brown sugar give a decisively fiery-sweet flavor that will definitely wake up your taste buds.
Really, it is absolutely delicious, a great meat entree to serve with mashed potatoes, and a bright green tossed salad.

Salsa Chicken Meatloaf Recipe Directions

- Total Time: 1 hour 45 minutes
Ingredients
- 12 oz salsa
- 1/2 lb ground pork
- 1 seeded
- minced jalapeno pepper
- 1 1/2 tablespoons taco seasoning mix
- 1 cup finely chopped onion
- 2 tablespoons BBQ sauce
- 3 minced garlic cloves
- 1 lb ground chicken
- 1 egg
- 1 1/4 cups herb-seasoned croutons
- 2 tablespoons brown sugar
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 1 cup shredded pepperjack cheese
- 1/4 cup minced cilantro
Instructions
Preheat the oven to 350 degrees F and grease a 5 x 9-inch loaf pan.
Mix the croutons with the salsa in a bowl, and set aside to soften, for about 15 minutes.
Heat the olive oil in a skillet over a medium heat, and cook the jalapeno pepper, onion, and garlic for 6 minutes.
Mix the ground chicken, ground pork, pepperjack cheese egg, taco seasoning, Worcestershire sauce, and cilantro into the crouton mixture, and mash any unbroken croutons.
Mix in the cooked onion mixture.
Transfer the meatloaf into the prepared loaf pan.
Combine the BBQ sauce and brown sugar in a bowl, stirring until the sugar has dissolved, then brush this mixture over the loaf.
Fold a 12-inch long piece of aluminum foil into a tent, and place the foil tent over the loaf.
Bake until the juices run clear and the loaf is no longer pink in the center - this will take about an hour.
Remove the foil tent for the final 10 minutes of baking.
An instant-read thermometer inserted into the center of the loaf should read at least 160 degrees F.
Remove the meatloaf from oven, cover it with foil, and let stand for 15 minutes before serving.
