My Three Favorite Salsa Recipes
The first recipe comes fresh from my garden every year; it's a classic tomato salsa.
The second recipe is perfect for any get-together. It has the perfect combination of black beans, corn, peppers, onions, and herbs.
The third recipe has more variety, using several different kinds of tomatoes, peppers, onions, and fresh herbs from my herb garden.
I hope you enjoy these salsa recipes as much as I have.
Chunky Tomato Salsa Recipe
Fresh from my garden
This is my favorite chunky tomato salsa recipe.
Every year I enjoy planting a salsa garden in anticipation of canning and eating lots of fresh tomato salsa.
This is the recipe I have used for years. I eat it with corn chips, put it in soups, and use it in my favorite Mexican dishes. It's easy to make and simple to can.
Ingredients
- 12 cups peeled and diced tomatoes
- 1/3 cup minced Jalapenos
- 2 cups diced green bell peppers
- 3 to 4 cups chopped yellow onions
- 1/2 cup pure cane granulated sugar
- 1 cup apple cider vinegar
- 1 tablespoon salt
- 5 minced garlic cloves
- 1 large can of tomato paste
- 12 ounces
Instructions
Chunky Tomato Salsa:
Mix all ingredients together, bring to a boil. Simmer for 30 minutes. Allow to cool and enjoy!
To can: Ladle hot salsa into hot, prepared, sterilizes pint-size canning jars, leaving 1/2 inch headspace. Wipe the rim of the jar with a clean wet cloth and adjust the lids. Process in a boiling water-bath canner for 15 minutes; remove from canner and allow to cool completely .

Warning: Please use rubber gloves when working with jalapeno peppers, as the oils can burn your skin.

Black Bean Corn Salsa Recipe
This salsa recipe has the perfect combination of black beans, corn, peppers, onions, and herbs.
Ingredients
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1/2 teaspoon ground cumin
- 1-15 ounce can black beans (rinsed and drained)
- 1-11 ounce can whole kernel corn
- 1 cup chopped Roma tomatoes
- 1/2 cup chopped red onion
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon canned
- diced jalapeno peppers or for less spice
- I have uses diced green chilies (optional)
Instructions
Black Bean Corn Salsa:
Blend Mayonnaise, lime juice, and cumin in a medium bowl. Next, stir in all remaining ingredients. Refrigerate and allow about one hour for the flavors to combine. Serve chilled with your favorite corn chips or pita chips.

Tangy Four Tomato Salsa Recipe
Another thick and chunky salsa recipe

This is another chunky tomato salsa, only with more variety. In this recipe, I use four kinds of tomatoes, three kinds of onions, three kinds of peppers (in a variety of colors), and three kinds of herbs. It takes a little more time to make, but it's well worth the time.
This one goes over big at any family get-together!
Ingredients
- 7 chopped plum tomatoes
- 7 medium tomatoes (chopped) I prefer Roma
- 3 medium yellow tomatoes (chopped)
- 3 medium orange tomatoes (chopped)
- 1 teaspoon salt
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 medium white onion (chopped)
- 2/3 cup chopped red onion
- 2 chopped green onions
- 1/2 cup choped sweet red bell pepper
- 1/2 cup chopped sweet orange bell pepper
- 1/2 cup chopped sweet yellow bell pepper
- 1/2 cup chopped sweet green bell pepper
- 3 chopped pickled pepperincinis
- 3 chopped pickled sweet bananna wax peppers
- 1/2 cup minced fresh parsley
- 2 tablespoons minced fresh cilantro
- 1 tablespoon dries chervil
Instructions
Tangy Four Tomato Salsa:
Combine all the tomatoes and the salt in a colander; allow to drain for 10 minutes. Transfer to a large bowl.
Next, stir in the lime juice, olive oil ,onions, peppers, parsley,cilantro, and chervil. Allow about an hour for the flavors to combine and serve with your favorite tortilla chips.
