Making sambal kacang is easy. Here is my version of sambal kacang. You can adjust spiciness and thickness of peanut sauce with balancing some ingredients such as peanut and water or other ingredietns according to your taste.

Sambal Kacang (Peanut Sauce) Recipe

- Serves: about 2 cups
- Prep Time: 10

Ingredients
- 1/2 lbs roasted peanut
- 4 Asian shallot (small)
- 3 cloves of garlic
- 1 tsp chili paste or according to your taste
- 1 tbsp chopped gula Jawa (Javanese palm sugar)
- 1 tbps kecap manis (sweet soy sauce)
- 2-3 tbsp tamarind juice or lime/lemon juice
- 1/3 tsp shrimp paste (optional)
- 2 1/2 cup of water
- salt to taste
Instructions
Grind the roasted peanut in a food processor or food/coffee grinder to make a fine paste. Set aside.
Put garlic, shallot, salt and shrimp paste into food processor. Pulse it into a smooth paste.
In a wok, heat little bit cooking oil (about 2 tbsp) then stir fry garlic and shallot paste for about 1 minute. Then add chili paste, palm sugar, soy sauce and water and bring it to boil. Add ground peanut and stir it to dissolve or mix. Simmer for about 8 minutes or until the sauce is thicken as you desired. Taste, add tamarind or lemon juice and add more salt it it's needed.
Remove from the heat. Sauce is ready to served with your favorite dishes.
