scramble eggs and banana delight

I have scramble eggs every other day. On the weekends when I have more time I like to add the banana. I like to use orange juice rather than milk to allow the eggs to separate. Orange juices also adds a sweetness which with the banana makes a delightful treat.

I ususally use 4 eggs, one banana and a dash of orange juice. The eggs and orange juice are mixed togther while the banana is diced and begining to fry in the fry pan. Add the egg mixture and allow it to start to lump, gentle stir and in a minute or two serve it up with a little pepper.

The pan does not need a high temperature, just a little patience and some virgin olive oil.

I also make an omlette the same way, just without the orange juice so that it forms a pancake. I will place a lid over the pan to steam the egg becasue I can not flip it or turn it over. It takes about the same time to cook. Add some pepper and enjoy.

Another favourite of mine is the smoothie. Two glasses of milk, one banana, 4 eggs(raw), two heaped table spoons of protein powder, teaspoon of milo (chocolate) and mix in blender. Drink. Berries an opptional extra.
