Espresso Sea Salt Caramel Truffles - My Best Candy Ever.

Handmade Caramel, Dark Chocolate, White Chocolate, Espresso Sea Salt - Any Questions?
Here's why my Espresso Sea Salt Caramels are better than any other sea salt caramels on the market: I cook a rich and smooth "dulce de leche" caramel from scratch and flavor it with intense Mexican Vanilla instead of the regular extract. Then I fill a dark chocolate shell with a generous portion of this melt-in-your mouth goodness and close the truffle with more chocolate. I pour some melted white chocolate over the top and sprinkle it with a pinch of Espresso Sea Salt. Voila!
The most important point: With other brands the chocolate melts away quickly, and we are left with a chewy piece of ordinary caramel candy.
My truffle is designed so the chocolates and the soft caramel melt at the same rate. The mingling of all ingredients, for the entire duration of the melting process, finishing with a hint of espresso and a gentle tease of saltiness - that's what makes my candy such a superior confection.

Why are Sea Salt Caramel Chocolates so incredibly good?
The keys are quality ingredients and technique.
One of my "secret" caramel ingredients is the "Dulce de Leche" in place of regular condensed milk - a double whammy of rich caramel flavor! The addition of Mexican Vanilla provides a distinct feel of fine Latin American dessert character. By cooking the caramel to a temperature of 236 degrees F, I keep it from getting too chewy or even hard. It "oozes" slowly and thickly from a cut truffle piece.

A pinch of salt brings out the flavors of any food, especially so in caramels. To take this principle onto a true gourmet level, I use this wonderful sea salt blend with espresso grounds in the mix. Needless to say, a hint of coffee enhances the flavors of dark and white chocolate. So, here's what you experience when you place one of these truffles into your mouth:
You bite through the chocolate shell and you notice the texture and flavor of the caramel filling, while the salt crystals tickle your taste buds ever so lightly. But then - the "mingling" begins. The confection starts to melt in your mouth. The caramel blends with the chocolate and it seems like this is the best chocolate you've ever tasted. A few seconds later, light saltiness combined with a gentle touch of coffee creates a flavor explosion in your mouth. The working-together of all components gives you this gorgeous sensation of sweet luxury - the taste of a truly unique and exquisite candy. You are in "truffle heaven"!

Recipe for Sea Salt Caramels
Use espresso sea salt or any other flavor you like
- Serves: Oh, 50 moderate folks. 10 gluttons like myself.
- Prep Time: 3 min. to gather all ingredients
- Total Time: 20-30 min. cooking time
You will need a candy thermometer - there's no way around it. I recommend a digital thermometer because it's easy to read, and accuracy is important when making candy.
Following this recipe, I provide the Amazon shopping links for thermometer and Espresso Sea Salt. You will also find a link to buy "Dulce de Leche" (my secret ingredient!), in case your grocery store does not carry this caramelized version of condensed milk.
Ingredients
- 2 sticks unsalted butter (8 ozs.)
- 16 ozs. brown sugar
- 1/2 teaspoon espresso sea salt
- 1 cup light corn syrup
- 1 can "Dulce de Leche"
- 1 Tablespoon Mexican Vanilla
Instructions
1. Over medium heat, melt 2 sticks of butter in a 2-qt. sauce pan with a heavy bottom. Cheap pans tend to burn the sugar.
2. Add 1 lb. (2 1/3 cups) of brown sugar, 1/2 tsp Espresso Sea Salt, 1 cup light corn syrup, 1 can Dulce de Leche; bring to a simmer, stirring constantly.
3. Insert the candy thermometer. Keep stirring and cook to 236 degrees F.
4. Take the pot off the heat and add 1 Tablespoon of Mexican Vanilla. Stir to combine well.
5. Pour the caramel in a buttered glass dish or 9"x9" cake pan and let cool all day or overnight.
This is a soft caramel. It won't hold its shape when you try to cut it into squares. I scoop it into my dark chocolate molds for a wonderfully rich truffle filling, but you may also scoop it directly into your mouth for a trip to Nirvana!

I use this brand and it's been very reliable to me. The curved sensor hangs over the rim of the pot while I'm stirring the caramel. Make sure you won't let the tip of the sensor touch the bottom of the pan - this would give an inaccurate reading. Keep the tip in the center of the mixture!

Wow, these were excellent! We struggled to make them last beyond a day. These are unlike any other truffle I've ever had, the espresso sea salt really adds an incredible flavor to it. - I have a question, whenever I make chocolate covered caramels w sea salt. They always end up with little spots on them the next day. Is it from the salt, or something else?

- Somtimes, when you melt chocolate over very high heat, the cocoa butter separates and leaves spots. Try to be patient when melting the chocolate and make sure that no water gets in it. (Water causes streaking)
